My family just moved to a bigger city, so our daily routine has changed, especially when it comes to getting home in the evenings.  My husband gets off work earlier than I do, so he picks up the girls at school and day care before heading home, which takes about an hour total.  I usually leave my office at 5:00, but I don’t get home until close to 5:30.  There are a number of things we have to do once we walk in the house, like put away our school or work stuff, change out of work clothes, feed the dogs, etc.  All I want to do then is sit down and relax, but my family reminds me of one other very important thing – dinner!

I have never really been a big fan of cooking.  I know it is necessary in order for us to eat, but I would much rather not spend a lot of time in the kitchen making dinner – especially now that we are home later, I am tired, and I actually want to spend time with my family before bed.  I have a go-to list of meals that are quick and easy to make, but I am sure that my family gets tired of eating the same things over and over (I certainly am!).  I look for new recipes to try out, but some are so complicated and time-consuming.  That is why when I had the opportunity to review a new cookbook – The I Heart Naptime Cookbook – I quickly said yes!

The I Heart Naptime Cookbook was written by Jamielyn Nye, the founder of the I Heart Naptime food and lifestyle blog.  Jamielyn has compiled more than 100 easy recipes in this cookbook, and the best part is that they all take less than one hour to make – perfect for busy or tired moms.  The I Heart Naptime Cookbook contains recipes for everything, including breakfast, baked goods, soups, salads, dinner, side dishes, slow cooker meals, snacks, drinks, and of course cookies and sweets!

I tried out a couple of the recipes in the I Heart Naptime Cookbook.  For dinner one evening, I decided to make Creamy Cajun Chicken Pasta – and it was super easy!  I put some chicken in the slow cooker before heading out in the morning, and when I got home, all I had to do was shred the chicken, cook the pasta, and throw all of the other ingredients together.  It took less than a half hour from the time I started to when I was dishing the pasta out onto plates.  I modified the recipe a little to fit my family’s tastes, but it was really delicious!  Both of my girls cleaned their plates (which is very unusual!), and there was enough left over for me to enjoy at lunch the next day.

I also wanted to make a sweet treat for my family, and after spending some time going through the cookbook (so many of the recipes looked amazing!), I decided to make Sugar Cookie Bars with Cream Cheese Frosting.  I love sugar cookies, but I hate making them – it never seems like they turn out right.  I was a little nervous about making the Sugar Cookie Bars, but this recipe was also really easy to follow and I felt like they would actually turn out good this time.  I was not wrong – they were delicious!  The cream cheese frosting and sprinkles certainly added some extra flavor and fun, and the Sugar Cookie Bars did not last long in my house!  They were perfect for a little snack after dinner.

Another great thing about The I Heart Naptime Cookbook is that it is full of helpful tips and fun crafts for you to do with your children, like a a DIY Half Apron and cute spice jar labels.  I especially loved the sections on pantry staples (what items to keep on hand so you do not run out when you really need them) and meal planning.  I think meal planning is soooooo helpful for busy moms, and Jamielyn has some great tips, as well as the instructions for a DIY menu board to write out your menu each week (which is nice for children who are constantly asking “what are we having for dinner tonight?”).  I look forward to trying out some of the other recipes as well, including Perfect Crepes with Fresh Raspberry Sauce, Honey Butter Cornbread Muffins, Comfort Lasagna Soup, Slow-Cooker Teriyaki Chicken, Soft Caramel Snickerdoodles, and Chocolate Mint Brownie Bites.  These are just a few of the delicious recipes contained in The I Heart Naptime Cookbook!

  1. My go to meal is something mexican. Heat up meat and spices and stuff it, cheese, green peppers, sour cream and salsa in a tortilla. Last school year we did this nearly every Tuesday night because of our crazy schedule. It made it easy for us to all sit down together for a quick dinner.

  2. I cook hamburger adding pepper, garlic powder, onion powder and then add a can of mushroom soup. Then I add 2 cups measuring from the soup can and cook till condensed. Make some toast and top with mixture and yum. You can make mashed potatoes too on a ambitious day.

  3. Believe it or not, my go-to quick meal is homemade pizza! It only takes 10-15 mins prep & cook time and is so delicious! Much better than the stuff you can get delivered or buy frozen.
