Birds Eye Fresh Vegetables

We all know that fresh veggies are good for us, but depending on the time of year, it may not always be easy to get the kind you want at the grocery store. That is why I LOVE Birds Eye frozen vegetables – any time of year!

Not only are Birds Eye fresh veggies good for the body, but they are versatile. SO versatile! I remember my mom making her String Bean Casserole for Christmas each year, using Birds Eye beans. Everyone raved over it, as it was full of flavor. Mom raved, as she could make this a day or two ahead of time and just pop it in the oven the day of. This meant more time for visiting with family and friends. I like to do this too, as I don’t want to be stuck int the kitchen while everyone else is relaxing and having a good time. I want to join in on that too!

My mom’s Green Bean Casserole was different than Birds Eye’s, but here is their recipe. If you need a quick holiday side/vegetable dish, this would be ideal:

There is another dish that I love, that is easy to make and pretty for serving.  It is a layered salad. Unfortunately I don’t have a photo of this, as I haven’t recently made it, but it is the perfect take along dish, and you will probably be asked to make it again and again. The Layered Salad starts in a large bowl or truffle bowl (a large see through dish is best, to show off the beauty of the salad). On the bottom of the dish, put shredded lettuce (make sure it is well dried), then a layer of chopped celery. Next you will put a layer of defrosted Birds Eye Early Harvest petite peas (these are so sweet and tasty).

The next layer will be chopped green onions. Repeat these layers 2 or 3 times.  Make sure you leave enough room at the top for the “dressing”. You won’t believe how easy (and tasty) this dressing is!  Spread mayo (about 1/2″ or 3/4″) on top of the last layer. Sprinkle grated parmesan cheese all over the top of the mayo (don’t be skimpy!). Then you will add about 1/4 cup of sugar – sprinkle it over the top. Voila – you are done! This is best made on the day that you will be serving it. When you serve it, mix it all together, making sure the dressing covers all.

Birds Eye has taken the guesswork out of seasoning and cooking time. You will be thrilled to have all the vitamins and goodness with each bite.

    My favorite holiday veggie dish is my mom’s sweet potato casserole! She didn’t make it this year though!

  2. My favorite holiday dish is green bean casserole! I also make carrots with butter, dash cinnamon and a dab of sweet & sour sauce.

  3. At this time of year, I’m all about winter squash. I recently got a pressure cooker, and the star vegetable dish at our holiday table was mashed butternut squash that I cooked in the pressure cooker. So good!

    I love broccoli with cheese sauce for the holidays. We have broccoli a lot but leave off the cheese sauce except for the holidays so it is a treat.
