Hellmann’s Chicken Change Up Spinach & Almond Chicken

I have had so much fun participating in the Hellmann’s Chicken Change Up over the past few months. This is my final recipe for this program, and I am so glad I had the chance to cook with Hellmann’s. I never knew there were so many options!

For this chicken change up, I made a recipe that is a twist on a classic – Spinach & Almond-Topped Chicken.  When I first glanced at the recipe, I wasn’t sure what my family would think of it.  The ingredients were a little different than we usually use (at least used together!), but gosh darn it, I am adventurous and decided to go for it!

SPINACH & ALMOND-TOPPED CHICKEN

Prep Time: 10 minutes
Cook Time: 15 minutes

1-1/2 Tbsp. Hellmann’s® or Best Foods® Real Mayonnaise
1 cup loosely packed baby spinach leaves, chopped
1 Tbsp. chopped almonds
2 tsp. grated Parmesan cheese
1 tsp. plain dry bread crumbs
4 boneless, skinless chicken breasts (about 1 lb.)

Preheat oven to 425 degrees.

In medium bowl, combine all ingredients except chicken. On baking sheet, arrange chicken, then evenly top with mayonnaise mixture.

Bake 15 minutes or until chicken is thoroughly cooked.

Calories 180, Calories From Fat 60, Saturated Fat 1g, Trans Fat 0g, Total Fat 6g, Cholesterol 10mg, Sodium 140mg, Total Carbohydrate 2g, Sugars 0g, Dietary Fiber 0g, Protein 27g, Vitamin A 4%, Vitamin C 4%, Calcium 4%, Iron 6%.

I am pleased to say that my family enjoyed the Hellmann’s Spinach & Almond Topped Chicken very much.  As always, the Hellmann’s mayo kept the chicken really moist, and added such a delicious flavor. This seems to be the case no matter what recipe it is in. I also like that even though very few breadcrumbs are used, the result is a crispy topping.

The parmesan cheese really added a nice flavor, and the almonds gave it a subtle crunch. The flavors really did compliment each other!
