Mini Chewy Pecan Muffins

Mini Chewy Pecan Muffins

OH.MY. Talk about decadent! These little treasures are to die for. I got this recipe from my aunt, though I am not sure where she found it originally. I have made them too many times to count, and I cannot stop eating them!

mini chewy pecan muffins

1 cup chopped pecans
2/3 cup butter
1/2 cup flour
1 cup brown sugar
2 eggs (beaten)
1/4 tsp. vanilla

pecan muffin ingredients

Combine chopped pecans, flour and brown sugar in large bowl and mix well. In a separate bowl, beat 2 eggs and add cooled melted butter (make sure it isn’t too hot, or it will scramble the eggs!). Pour egg mixture into flour mixture and blend just until moistened.

Grease and flour mini muffin tins (I use Pam spray, then sprinkle flour on). Recipe makes approximately 24 mini muffins. Using a cookie dough scooper (if you have one), fill each cup about two-thirds full.

Bake at 350 degrees for about 12 minutes. I like mine to be extra chewy, so I pull them out of the oven a little sooner.

Let cool for about 5 minutes then carefully ease each muffin out using a spoon. Place on platter and sprinkle with powdered sugar. Serve warm or cool (I prefer warm).

I hope you enjoy these Chewy Pecan Mini Muffins as much as I do. Warning: You may become selfish after you try these – I have found myself not wanting to share them.

For more chewy pecan goodness, make sure you take a look at my Heavenly Pecan Tarts recipe.  My mom (from Mississippi) made these every Thanksgiving, and they are AMAZING!

  1. Thanks for sharing. These look so delicious. I love pecans and luckily I have a pecan tree in my back yard.

  2. These look delicious, i love a good moist muffin recipe. And because they are mini, I won’t feel so guilty eating 2 of them.
