I love breakfast. Since my family and I have cut out grains entirely {among other things}, I have to get pretty creative in the morning to break the monotony of eggs. I experimented a bit yesterday and gave the typical eggs in a nest a fresh look. Perfect for gluten intolerant or celiac folks or those simply following paleo or primal fare. I introduce to you Paleo Eggs in a Nest!
The sweetness of the pepper is a welcome addition. Served with chicken sausage and a nice red bell pepper cuppa – it is the perfect way to start my day!
Ingredients
- Organic extra virgin olive oil
- 1 organic red bell pepper
- 2 organic eggs (I LOVE Vital Farms eggs)
- Pinch of organic Provençal salt blend
Directions
- Preheat oven to 375° F. Drizzle oil in a ceramic baking dish.
- Slice top and bottom from pepper. Cut the remaining pepper in half, horizontally, and remove core and seeds.
- Place in bottom of baking dish to coat in oil. Flip once to coat other side.
- Crack open one egg and pour into a pepper ring. Repeat with other egg.
- Sprinkle salt blend on top and bake in oven to desired doneness. For mine to be completely cooked through, it took about 15-20 minutes.
- Remove from oven. Using a metal spatula, lift out of baking dish, and arrange on plate.

My mom used to make “eggs in a nest” for me all the time when I was growing up. I make them every now and then for my own kids. I never thought to make them this way. What a great idea! Thanks for sharing this recipe. I’ll have to try it out.
