Grilled Zucchini Boats

We do a lot of barbecuing during the summer months. Not only do we get to enjoy the great outdoors and spend quality time together, it gives us a chance to be creative when it comes to veggies. One of our favorite things to throw on the grill are Grilled Zucchini Boats. These are absolutely delicious, and the “goodness” is wrapped in a foil packet – vitamins and all! These are perfect for everyone in the family and the best part is you can use any spices on these and they will turn out great!

What nutrients to zucchini provide?

Zucchini is part of the wonderful squash family. That would include yellow, spaghetti, acorn, butternut, etc. All of these are packed full of nutrients and have a very similar texture and taste when cooked. Make them versatile when cooking. You can often trade them in recipes for one of their counterparts. 

What does zucchini taste like?

I like to describe it as spongy, semi-sweet, soft and chewy. Each type of squash is very similar in texture and taste but when you start adding spices or using different cooking methods like roasting, grilling, or even cooking in the slower cooker you will end up with a different taste. 

Instructions:

Step 1:Cut zucchini lengthwise.

Step 2: Gently carve out a strip in the middle of each zucchini half using a knife or small potato peeler.

Step 3: Fill the zucchini. One half with butter and garlic powder, the other half with shredded parmesan cheese.

Step 4: Close the zucchini halves together for each one and place individually on pieces of foil. Bring each side of the foil up and fold over.

Keep folding down until you reach the zucchini, then fold the ends inward.

Step 5: Place the zucchini boats upright on the top rack of the grill (or coolest portion of the grill), and grill for 10-15 minutes, depending on how crisp you like your zucchini. Remove with tongs and serve (we like to pour the juices over our zucchini after plating them).

These Grilled Zucchini Boats are great to take camping, as you can prepare them ahead of time, put them in the cooler, and straight on the grill!
