
I’m always up for finding a new way to make family favorites better. With food allergies and specialized diets, I want to accommodate everyone. On the weekends, my family enjoys pancakes and I have a go-to, quick and easy recipe that is a hit – except my beautiful sister in law who adheres to a gluten-free diet. She’s been an inspiration to find recipes we can all enjoy, without compromising her health, or the familiar flavors we are used too. I’ve turned to using cornmeal – it is gluten-free.
P.A.N. Cornmeal has gained popularity here in the United States even though it’s been around for many years. It’s in my local grocery stores in several different varieties.

I’m from the great Cornhusker state so I know all about corn. I couldn’t call myself a true Husker if I didn’t. Corn is rich in nutrients and has versatility. While native to the Americas, cornmeal is a staple in countries all over the world. South America calls P.A.N Cornmeal the number one cornmeal!

I found a recipe for Johnny Cakes from the
P.A.N Cornmeal website that will please the pancake lovers in your life.
Johnny Cakes
Ingredients
1 cup P.A.N. Pre-cooked White Corn Meal
1 ½ cups milk
1 egg
1 teaspoon salt
1 tablespoon shortening
Shortening or vegetable oil for greasing the pan (I used Crisco)
Preparation
Mix P.A.N. Pre-cooked White Corn Meal and salt in a bowl. Heat milk and shortening in a pan. Remove from heat before it boils.
Pour the hot milk on the corn meal mixture and add the egg, slightly whisked. Knead well until smooth.
Grease a hot pan or griddle and pour the batter, forming 4-inch wide discs. Cook for 2 minutes on each side or until golden brown.
Serve with butter, honey, jam, maple syrup, bacon, eggs or sausages.

As you can see, I love my Johnny Cakes with a bit of blueberry jam! They are fluffy and so delicious!

I’ve never heard of this before – I love cornmeal, but it takes a while to cook it. This pre-cooked cornmeal is wonderful – I’d love to try it – where have I been, I’ve been missing out!!!

These Johnny Cakes look awesome! My kids love these topped with fresh strawberries and a little Redi-Whip.

I have never heard of P.A.N. cornmeal, however, I do not buy or make recipes using cornmeal. Those pancakes do look yummy, my hubby would love them 🙂

Surprisingly enough, I have never had homemade pancakes that weren’t just a powdered mix from the grocery store. These sound really tasty. I’m a lover of cornmeal and I look forward to trying some of these. 🙂

I had heard of Johnny cakes but never knew what they were. I grew up on a farm and my mom never made these. Our school lunches sometimes had cornbread and I didnt care for it at all. BUT, as an adult I have tried so many things we never had when little and some of my family, including a daughter, my son in law and myself have been gluten free for years. I just never thought of making much with cornmeal. (I am a boring gf person, mostly eating fruits, veggies, nuts and meats). I;m ready to try some grains back in and some TASTE again. Honestly, I really want to try these fried in some organic coconut oil and topped with some fresh honey from the farmers market!

I had completely forgotten about johnny cakes and how good they were. My childhood friends Mother used to make them for us in the morning after a night camping in the back yard. She had syrup and a bunch of different preserves. I am going to have to make this. Thanks I have to find out which store near me carriees P.A.N.
