I bake mostly from scratch but there is one thing that I don’t mind cutting corners with, my Chocolate Peanut Butter S’more Bars. Why haven’t I tried to figure out a way to make these bars from scratch? Probably because it is so darned easy using a sugar cookie mix, along with a few “from scratch” touches.
Have you had Peanut Butter Cup S’mores before? If your answer is no, then you are really missing out. Recently we tried to create something similar, but with a little twist…a new kind of s’more, if you will. I am happy to report that it was a huge success!
We already know that chocolate and peanut butter go so well together so why not take it a step further and add some marshmallows, graham cracker crumbs and sugar cookie mix to make a S’more bar?
Here is the S’mores recipe that could change your life forever!

1 pouch (1 lb 1.5 oz) sugar cookie mix
5 graham crackers crushed
1 teaspoon cinnamon
1 teaspoon sugar
1 cup butter softened
1/4 tsp. salt
3/4 cup creamy peanut butter
2 cups milk chocolate chips
10.5 oz bag of miniature marshmallows
What can I substitute for graham crackers in S’mores?
Well, there are all kinds of things, really, as evidenced by the cookie mix we are using in our recipe above. In addition to that though, you can also use pretzels, different types of crackers (Saltines, Keebler Original, Ritz, or other buttery crackers), and potato chips. Be creative – that’s how new recipes are discovered!
Preheat your oven to 375 and lightly grease a 13″ x 9″ pan. Set aside.
Crush the graham crackers, using a processor or the good old fashioned method with a rolling pin over a zip lock bag. Add the cinnamon and sugar and mix.
Combine butter, peanut butter, graham crackers, and cookie mix until fully mixed and press it in your 13×9 pan. Use a spatula to make sure it pressed evenly on the bottom and up the sides about an inch or so. Bake for 18-20 minutes in oven at 375 degrees.
Pull the pan out of the oven and sprinkle the chocolate chips over the cookie crust. Wait a few minutes for them to start melting, and then with a knife or frosting spreader, spread them evenly over the cookie crust. I smear them around so that every surface is covered in yummy chocolate.
Next up – toasting the marshmallows on top of the dessert – the finishing touch!
Turn on the broiler. While you are waiting for the broiler to heat up, layer the marshmallows over the melted chocolate. Place them side by side, neatly snuggled together.
The toasting of the marshmallows won’t take long at all, so don’t walk away! Just like when you roast marshmallows over a campfire, make sure you watch them carefully and roast them until they are golden brown. THEY BROWN VERY QUICKLY!
Place the pan back in the oven to broil. When they are done, carefully remove the pan with hot pads and place on a cooling rack.
The hardest part about this recipe is waiting the few minutes while they cool. Hot marshmallows will definitely scorch your tongue (trust me – I have burned mine on these tasty bars more times than I care to admit). Be patient – I promise, the wait is so worth it!
After the pan is cooled, cut bar into squares, and use a spatula to to serve.
How many squares can you get from a 9″ x 13″ pan?
That is kind of a personal choice. Typically, if you will be serving these to guests, then you can get about 12 squares when you make a cookie bar in a 9″ x 13″ pan. If these are to be enjoyed just with your immediate household, however, you may want to cut them into larger squares (if your family is anything like mine at least!).

Chocolate Peanut Butter S'mores Bars
Ingredients

- 1 cup butter softened
- 3/4 cup creamy peanut butter
- 2 cups milk chocolate chips

Instructions

In a bowl, crush the graham crackers. Add the cinnamon and sugar.
Combine butter, peanut butter, graham crackers, and sugar cookie mix until fully mixed and spread in the bottom and sides ( 3/4") of 13×9 pan. Use a spatula to make sure it is even. Bake 18-20 minutes in 375 degree oven.
Pull the pan out of the oven, and sprinkle the chocolate chips over the cookie crust and allow them to melt. Spread them around evenly using a knife or other spreader.
Set the oven to broil.
Place the marshmallows over the melted chocolate chips, fitting them snuggly next to each other.
Return pan to oven and broil until marshmallows are golden brown. This doesn't take long at all, so don't walk away, and make sure you keep an eye on them at all times. Marshmallows can burn quickly!
