The flavors of sweet watermelon, tiny tomatoes and feta cheese complement each other providing a sweet & salty combination. Add some fresh mint for a little punch and you have a salad that’s perfect for summer parties, and you don’t have to heat up the kitchen to make it.
Watermelon Tomato Salad
Serves 4
Ingredients
4 cups watermelon, cubed
10.5 oz Sunburst tomatoes, quartered
1/2 cup fresh mint, chopped
Salt
Pepper
2 tbsp. olive oil
Feta cheese
Instructions
Combine watermelon, tomatoes, mint in a bowl. Season to taste with salt and pepper, mix.
Drizzle with olive oil.
Serve with a slotted spoon, to keep juices off plate, and once plated then top with crumbled feta.

This looks really yummy. I have made a similar recipe with cucumber replacing the watermelon. It is interesting because I find that watermelon and cucumber are very similar tastes, so I bet this would be amazing. I will be trying soon.

I make this quite often in the summertime, but I also add thinly sliced red onion & balsamic vinegar. Delicious!
