Peanut Butter Cup Surprise Cookies


I used to make these Peanut Butter Cup Surprise cookies years ago, and lost the recipe until recently. Oh how I have missed these cookies!  There is a “surprise” inside each one, and the flavor is amazing!

Mix dough and unwrap peanut butter cups. After dough is mixed, form dough around each peanut butter cup, like this:

Place on cookie sheet:

Bake and then add glaze (if desired):



Cream together:

  • 1 cup (stick)  Butter Crisco
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 tsp. vanilla

Blend together and add:

  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 40 – 45 miniature peanut butter cups

Mix until creamy. Form small amounts of dough around each peanut butter cup, making sure that peanut butter cup is completely covered. Place on baking sheet and cook at 375 degrees for 7-8 minutes. Do not overcook!

Glaze (if desired):
While cookies are baking, melt in a small bowl, 15 peanut butter cups, and a 1/2 tsp. Crisco. Melt in microwave in 15 second increments until smooth. Using a spoon, spread a small amount of glaze on each cookie.

*Note – the glaze is optional – the cookies taste just as good without it!
