Peanut Butter Cup Surprise Cookies

Peanut butter? Chocolate? All in one decadent little cookie? Yes please! Since way back when, peanut butter and chocolate have always worked well together. I think that’s why I love this recipe so much – it combines both of the above and is enveloped in a buttery, slightly crispy cookie coating. I used to make these Peanut Butter Cup Surprise Cookies years ago, and the recipe went missing until recently. Needless to say, it was a happy day when I found the recipe card. Oh how I have missed these cookies!  There is a “surprise” inside each one, and the flavor is amazing!

You will have to shop for peanut butter to make these cookies but trust me, it’s totally worth it! Peanut butter is a staple in many households and for good reason.

Mix dough and unwrap peanut butter cups. After dough is mixed, form dough around each peanut butter cup, like this:

Place cookies on cookie sheet,  about 1 inch apart, and bake per directions below.

These Peanut Butter Cup Surprise Cookies are melt in your mouth delicious!

PEANUT BUTTER CUP SURPRISE COOKIES:

Cream together:

  • 1 cup (stick)  Butter Crisco
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 tsp. vanilla

Blend together and add:

  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 40 – 45 miniature peanut butter cups

Mix until creamy. Form small amounts of dough around each peanut butter cup, making sure that peanut butter cup is completely covered {hint – if you use just a small amount of dough on each, you get more cookies!}. Place on baking sheet and cook at 375 degrees for 7-8 minutes. Whatever you do, please do not overcook these cookies!

Glaze (if desired):
While cookies are baking, melt in a small bowl, 15 peanut butter cups, and a 1/2 tsp. Crisco. Melt in microwave in 15 second increments until smooth. Using a spoon, spread a small amount of glaze on each cookie.

*Note – the glaze is optional – the cookies taste just as good without it!
