My son often drinks milk alternatives, and I have on occasion as well. I have never tried cooking with these products before, as I somehow thought that it wouldn’t work the same as milk in a recipe. Boy, was I wrong!
I was asked to create a recipe using Blue Diamond Almond Breeze almond milk, and I gladly said, “yes”. I am always up for a challenge, and trying healthier alternatives to my favorite foods. I decided to use the Chocolate Almond Breeze to make a yummy Tapioca pudding. Previously I had only made tapioca with real milk, and I feared that the almond milk might not work the same. It was actually really easy, and the taste? Well, I’ll tell you about that after I show you the recipe and finished product.
Almond Breeze Tapioca Pudding
1/3 cup sugar
2-3/4 cups Chocolate Almond Breeze (you could also use one of the other flavors instead, if desired)
1 egg well beaten
3 tablespoons tapioca
1 tsp vanilla
1/8 tsp salt
1/4 cup white chocolate chips (optional)
1/4 cup chopped macadamia nuts (optional)
Measure Almond Breeze and pour into large saucepan.
Mix in the sugar, beaten egg, Almond Breeze, salt and tapioca. Let sit for 3 or 4 minutes, then turn heat to medium-high and stir constantly. When mixture is boiling (still bubbling while stirring), remove from heat.
Add vanilla:
Add white chocolate chips and macadamia nuts (if desired):
Cool for about 20 minutes then put in bowl, or fill individual dessert cups. Refrigerate, add dairy-free whipped cream (if desired) and enjoy!
This was such an incredibly easy recipe, and I was really pleased with the results. I feared it might not “hold together” like tapioca with milk, but it held together just fine. It tasted SO good too. If I didn’t know that almond milk was used in place of regular milk, I would have never been able to tell. I also loved that it was so light tasting, and not too sweet (as tapioca often is).

Hey Jen, I have used the Almond Breeze in fruit smoothies. I started using alternative milk drinks a couple of years ago, mainly for use in cereal and then the smoothies I LOVE (made with 1/2 of a fresh peach, 1/2 cup FROZEN blueberries, 1/2 cup banana, 1/2 cup vanilla yogurt and half cup Almond Breeze and a scoop of Vanilla protein powder. I sometimes add a bit of ice to make it super frosty! This is enough for two servings, so I eat one and FREEZE the other as a popsicle cup with a spoon (or use a popsicle stick). Well, my dad was dairy farmer and he may be rolling his eyes in heaven, but heh…this stuff is GOOD! I started using when developed stomach issues and loved it!

Mmmm your smoothies sound good – I think I will have to try it. That’s a great idea to save the leftovers for later too and freezing them!
My family and I aren’t too big on dairy products (well, dairy you get in the store anyway)-We do drink goat’s milk, but that’s about it. We DO, however, LOVE Blue Diamond almond milk and have been substituting that in our cereal, etc. for awhile now.
Although I haven’t tried cooking with it, though. I think that’ll be my next adventure 🙂

Yum! We’ve used almond milk to sub for regular milk in some baking recipes to keep it dairy free.

We don’t drink milk alternatives (we like cows – LOL), but I like the idea of cooking with them for a different flavor. This sounds yum!

WE HAVE A WINNER! 5* if your avoiding dairy but want a pudding..tapioca has health benefits also..I cut the sugar in half n it’s still sweet enough for me..set up nicely..very pleased n will make it often!
Made it and loved it…5 stars…followed recipe to the letter and it set up nicely as it cooled…was thin to start but fine in the end as it cooled…great taste and I will be having this often …thank you…
