Best Fluffy Bacon Pancake Recipe
Ingredients
- 12 ounces of bacon (preferably center-cut and thick-cut)
- 1 3/4 cups of flour (feel free to use the all-purpose one)
- 1 tablespoon of sugar (granulated)
- 1 1/2 teaspoons of baking powder
- 1 teaspoon of baking soda
- Kosher salt according to your preference
- 2 cups of buttermilk
- 2 eggs
- 4 tablespoons of unsalted butter
- Maple syrup
- A little bit of butter for greasing the pan (optional)
Instructions
#1: Cook the Bacon
It is always advisable to prepare the bacon first, and the best way is to do it in a single layer on a griddle or in a large nonstick skillet over medium to high heat. This won’t take too much of your time, somewhere between 8 and 10 minutes, depending on the intensity of the heat. Don’t forget to flip the bacon occasionally so that it is equally crispy on both sides.
Once it’s done, transfer it to a plate covered with a paper towel. As for the leftovers, you can use the bacon fat to cook the pancakes or spill it. It depends on your preferences; however, if you ask us, nothing beats the flavor you get when you use leftover fat as a spread.
#2: Prepare the Batter
As for making the batter itself, it would be better to separate the dry from the wet ingredients. Place the dry ingredients (flour, granulated sugar, baking powder as well as soda, and finally kosher salt) in a large bowl and whisk well together until finely combined and evenly distributed.
It’s time to work with the wet ingredients. The steps you must take before mixing all the wet ingredients together include melting the unsalted butter in the microwave or on the stovetop. The second thing to do is whisk together the buttermilk and eggs in a medium bowl until well combined.
Using a wooden spoon, make a well in the center of the dry ingredients, add the buttermilk mixture and then the melted butter, and gently fold them together until just combined. – This is the secret of this best fluffy bacon pancake recipe.
Namely, it is very important not to over-mix the batter because that usually results in very dense pancakes, not the light and fluffy ones that most of us are carving for. For better results, let the batter rest for at least 5 minutes.
In the meantime, prepare and heat the pan you will use to bake the pancakes.
#3: Cook the Pancakes
Don’t forget to grease the pan first with unsalted butter or the fat left after frying the bacon, and if possible, repeat the process between baking each pancake.
Now we move on to the key part of this process. After the pan has reached the desired temperature, place 1 strip of the bacon in the pan and pour 1/4 cup of batter over the center of the strip, allowing it to spread and form a kind of circle.
You can bake one pancake at a time, or several at once depending on the size of the pan you have decided to use. For example, we often use a 12-inch pan that usually fits about 5 pancakes. Flip the pancakes and cook until they get a nice golden brown color.
Finally, we suggest you serve it drizzled with maple syrup.
