Mini Chewy Pecan Muffins
OH.MY. Talk about decadent! These little treasures are to die for. I got this recipe from my aunt, though I am not sure where she found it originally. I have made them too many times to count, and I cannot stop eating them!
1 cup chopped pecans
2/3 cup butter
1/2 cup flour
1 cup brown sugar
2 eggs (beaten)
1/4 tsp. vanilla
Combine chopped pecans, flour and brown sugar in large bowl and mix well. In a separate bowl, beat 2 eggs and add cooled melted butter (make sure it isn’t too hot, or it will scramble the eggs!). Pour egg mixture into flour mixture and blend just until moistened.
Grease and flour mini muffin tins (I use Pam spray, then sprinkle flour on). Recipe makes approximately 24 mini muffins. Using a cookie dough scooper (if you have one), fill each cup about two-thirds full.
Bake at 350 degrees for about 12 minutes. I like mine to be extra chewy, so I pull them out of the oven a little sooner.
Let cool for about 5 minutes then carefully ease each muffin out using a spoon. Place on platter and sprinkle with powdered sugar. Serve warm or cool (I prefer warm).
