Easy Breaded Chicken Recipe
I should say super easy AND delicious. This is my go-to meal when I forget to thaw something for supper or am just running behind and need something quick. Our local grocery store sells boneless chicken for $1.99 lb everyday if you buy it at the meat counter. Normally I buy 2 breasts which feeds our family and that equals about 1 1/2 lbs., so this is a relatively cheap supper as well. I bought 3 breasts when I made it this particular night so that my husband would have some leftovers for lunch the next day. The mayonnaise makes this meal I swear!
Easy Breaded Chicken
2 or 3 Chicken breasts
Panko bread crumbs (or any breadcrumbs you have)
1/2 cup or so mayonnaise
1/2 cup or so grated or shredded parmesan
Heat oven to 425. I cut the chicken breast in half to cook quicker. Mix your mayo with the parmesan cheese and coat both sides of the breast. Coat chicken breasts in panko bread crumbs. Cook for 30 minutes. If you use the frozen chicken breasts that come in the bag cooking time will be less as they are thinner. As you can see my chicken was pretty thick.
My girls love the panko bread crumbs so much. Truth be told so do I. I serve these breaded chicken tenders with whatever veggie I have around the house. This night it was black beans and salad. Yes I am a lucky mama that my girls eat salad. Next time that you don’t think you have time to make supper and are thinking of heading to a drive thru try this recipe – so much better than what you will get in that fast food bag.

I have heard so much about using mayonnaise on chicken, although never tried it. Looks delish!
That looks really yummy! I tried panko crumbs for the first time recently as I had gotten a free sample of ginger & soy flavored crumbs… They were delicious.
I know Bill would love this as his fave cheese is parmesan and I know the mayo would keep it really moist.
This is definitely going on my Pin board to try soon. I even have chicken breast in the freezer.

I like Panko and use it more often than traditional bread crumbs. I like to mix it with a bit of freshly grated parmesan and toast up some eggplant!
I made this tonight & it was SO yummy! My 4 year old had 3 helpings & my 13 year old said I needed to make a lot more next time 🙂
