Grocery shopping at Lucky Supermarkets or Save Mart Supermarkets? You don’t have to ask me twice – I love both of these stores! I am fortunate to have two houses, where I split my time. At our second home, there is a Save Mart right around the corner, and at our primary residence, Lucky is just a hop, skip and jump away!
I visited my local Lucky Supermarket in search of Lindsay Peppers. Although I have purchased them before, and have included them in a variety of recipes, I was looking for a specific jar of peppers this time. I decided to create a new recipe, Calzone Pepper Pockets, and wanted to use Lindsay Sliced Sweet Banana Peppers. I didn’t want the flavor to be overwhelming in this recipe, but more subtle.
My Lucky Supermarket didn’t have all of the Lindsay Pepper varieties, but they did have the one I needed. I would like to see their shelves with all of the different peppers, as I would love to include them in other recipes.
There are so many yummy pizza dough recipes online, but I decided to use a Bobby Flay pizza dough recipe. Of course you could use pre-made store bought pizza dough too, if you want to save a little time. I, however, have been craving a good home made pizza dough lately.
CALZONE PEPPER POCKETS
Ingredients:
Pizza dough
Lindsay Sliced Sweet Banana Peppers (or Lindsay Peppers of your choice)
Pizza Sauce
Cheese (I used a 3-cheese blend), grated
Tomatoes
Mushrooms
Olive oil
Garlic Powder (to taste)
Parmesan cheese (to taste)
The sky is the limit really – you can add whatever you like in your Calzone Pepper Pocket! Some other things that would be really good are Canadian bacon, regular bacon, pepperoni, salami, feta cheese, spinach, etc.
Directions:
Divide the pizza dough into golf ball size pieces.
On a lightly floured surface, roll each piece of pizza dough very thin and add about a tablespoon of pizza sauce (you can use more or less, depending on your preference).
On one half of each pocket, sprinkle shredded cheese over one-half.
Continuing on just one half of your pocket, layer the remaining ingredients, starting with the flattest items (ie: spinach, salami).
Add another sprinkling of shredded cheese over the toppings.
Fold the empty half of the pocket over the fillings and seal with a dab of water (I use my finger and swipe water on the bottom edges).
Press edges down with a fork, and make sure the pockets are sealed completely.
Place pockets on a cookie sheet or baking stone. Brush each pocket lightly with olive oil (this will add a nice sheen to the finished product!) and sprinkle with garlic powder and/or parmesan cheese.
Bake at 400 degrees for approximately 20 minutes, or until golden brown.
My gosh these are good! The Lindsay Peppers add such a nice flavor, and really make these Calzone Pepper Pockets come to life. If you like to live on the edge, you could use another variety of Lindsay Peppers. Each jar of peppers states whether they are mild, medium or hot.
I hope you will try the above Calzone Pepper Pockets recipe – I think your family will love it, especially since they can create their own, using their favorite ingredients!

I have never had jar peppers. I think I need to buy some because I love fresh peppers but hate how long they take to cook to soften enough for the kiddos to eat. Jarred would be perfect!

I’m not a big fan of banana peppers, and actually think green peppers are more complimentary for sandwiches or calzones. To each their own.

Sounds perfect, I would only make one change: The Pizza dough would be made from a Gluten free flour mix.

This isn’t something I would like (not a big fan of cheese other than mozzarella, banana peppers are way too spicy/sour/hot for me & I don’t like pepperoni) but this recipe is right up my Father’s alley.

These look so good. We always have banana peppers (mild of course for me) in the house. We have the slices for pizzas, salads, nachos and then we have the full peppers as hubby likes to have a couple if we order out pizza.

I never had sweet banana peppers until I met my husband….he’s from the south. The are my favorite now!!! I did not know that they came in different heat levels…I have never heard of the product..ill have to look the next time we go shopping to see if we have them here in PA.

OMG this looks and sounds so good. I like eating this type of pocket but never thought about making them. For a non cooker I could do this thanks to all the already rolled out pizza doughs in the store.
