I am a salad girl. I eat at least 1 every day and most days 2. In the summer I use the veggies I grow in my garden but when my lettuce is done and in the winter I buy organicgirl good clean greens. Always!

I made a simple salad when I first opened it. My garden is still producing a little so I popped some cherry tomatoes, peppers, and a simple vinaigrette. It was wonderful! The vive la France is a tasty mix and I am glad I didn’t drown it in overpowering dressing which allowed the nutty flavors of the mix itself to be the star of my salad. I will keep my fingers crossed that BJ’s Warehouse starts carrying it but if they don’t I know that my local Home Economist will always have a full selection of organicgirl products.
Kale. I went 30 years without ever eating kale. I totally was missing out on the delicious green filled with antioxidant vitamins A, C, and K as well as being packed with plenty of sulphur-containing phytonutrients. Phytochemicals are non-nutritive plant chemicals that contain protective, disease-preventing, compounds and have been shown as necessary to sustain our bodies. The QUICK COOK! baby kale is also triple washed and super easy to incorporate in your evening meals. Here is how I easily prepared my QUICK COOK! baby kale (thanks to Bobby Flay).
12oz package organicgirl QUICK COOK! baby kale
3 tablespoons olive oil
garlic (I used 2 cloves but adjust to your taste)
1/2 c. chicken stock
salt and pepper
2 tablespoons red wine vinegar
Heat the olive oil in large saucepan and add garlic cooking until softened. Turn heat to high adding the stock and kale. Cook 4-5 minutes flavoring with the salt and pepper to taste. I add the vinegar at the end because my husband doesn’t care for it but I do! There, perfect addition to basically any meal!

I’m just starting to discover the greens of the world and I must say I’ve been missing out, too! I really enjoy all the different types of greens, especially spinach 🙂
While I’ve never hear of Mache until this post, I’m really curious to try it now!
