Best popovers

Have you ever had popovers?  One of my favorite things my mom cooked when I was a child was roast beef and Yorkshire Pudding. I remember how she would use some of the drippings from the roast beef and add it to the batter before cooking. I would always get a kick out of watching the pudding “poof up”, as I anxiously awaited the timer to go off, indicating it was time to indulge!

She then started making popovers, using the same batter, and I quickly fell in love with them too. I make these for my family quite often, especially when we have prime rib.

I am not sure where she got this recipe, but I just have to share it with you. Nobody should be without it!

Best Ever Popovers

Ingredients:
2 eggs
1 cup of milk
2 tablespoons melted butter
1 cup flour
1/2 teaspoon salt
Beef drippings (optional)

Whisk together the butter, milk and eggs in a large bowl. When these are well mixed, add the flour and salt and whisk until completely smooth.

Grease popover (muffin) cups with cooking spray, soft butter, or shortening. Pour batter into each up until they are about two-thirds full.

If you are cooking a roast too, this is where you will add a few drops of the beef drippings.

Bake at 400 degrees until brown, usually 35 to 40 minutes. It is important to NOT open the oven door while the popovers are baking. I usually put a sticky note on the oven to remind everyone not to open it.

These popovers are simply mouth-watering. You can put butter in the middle (oh my – to die for!), or just eat plan. I have a feeling that your family members will request these often, just as mine do!

  2. Popovers are so good. They really are super easy to make too. I admit, I havent made them for some time, and really should. I have never seen it made with the drippings like that. We never have prime rib, but they are good with anything and are so good slathered with real butter.

  4. I have never had popovers but have watched them made on TV and your pictures just make my mouth water. They look like they would be very simple to make I will just have to try them this week
