Toasted Chicken Cordon Bleu with Garlic Lime Aioli Sandwich
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup of flour
- Jack or Swiss Cheese Slices
- 8 slices Black Forest Ham
- Peanut Oil
- Salt & pepper
- Dutch Crunch or Ciabatta bread or rolls
Aioli ingredients:
- 3/4 cup Olive Oil Mayonnaise (or mayo with tsp. olive oil)
- 2 tsp. lime juice
- 1 – 2 garlic cloves
- 1/4 tsp. salt
Aioli prep:
Make the Aioli sauce first, so the flavors can blend while the rest of the sandwich is being prepared. Crush the garlic clove(s) in a small bowl. Mash garlic with the back of a spoon. Add lime juice and salt and mix. Add mayo to the garlic and lime and blend well. Cover and refrigerate.
Chicken prep:
Heat peanut oil in large skillet (medium heat). Wash and pat dry chicken breasts, and slice each breast in half lengthwise. Put flour in bowl and add 1/4 tsp each salt and pepper. Mix. When oil is heated, dredge each chicken piece in the flour and place in skillet. Cook on each side until golden brown (about 5 minutes each side). Remove each chicken breast from pan and place on plate lined with paper towel.
Sandwich prep:
Open rolls and place two halves on the Black & Decker Toaster Oven baking sheet. Put two slices of black forest ham on each side of roll and then add a chicken breast half on top of the ham. Add a slice of swiss (or Jack) cheese on each half.
Place in toaster oven on the broil setting at 350 degrees for approx. 5-6 minutes, or until cheese is melted and bread is crisp. Remove and put the two sandwich halves on a plate.
Carefully with a knife, gently lift ham to add aioli (between ham and bread), as well as adding aioli on top of each sandwich half.
Sandwich can be served open face (2 halves), or can be combined to make a large sandwich. For kids, one half each would probably be plenty.
Grab a napkin and enjoy!
