I bake all the time.  Bananas go bad quickly and I whip up my family’s favorite banana bread.  I prefer to bake my own cookies than buy from the grocer, although many bakeries are outstanding, to save some money.  For years now I have added I Can’t Believe It’s Not Butter to my recipes instead of the required oil.  Sold in easy to use sticks it brings your baked goods a delicious buttery taste and are a better nutrition option than butter.

Unilever provides a wide variety of soft spreads, including Country Crock, I Can’t Believe It’s Not Butter!, Promise, Brummel & Brown, and Imperial so there is an option for everyone.  Each of their spread options:
·         Have 0g trans fat per serving
·         Contain no partially hydrogenated oils
·         Have no cholesterol
·         Are 70% less fat than butter per serving
·         Have 30% fewer calories than butter per serving

and I am adding tastes great to that list!

I was also sent a fabulous baking set bake my family up some goodies.  It was my first time using a Silpat® baking sheet liner so I was a little bit nervous that the cookies wouldn’t turn out like they normally do.  I decided on my tried and true Oatmeal/Chocolate Chip/Coated candy cookies.  If I could add nuts to that I would but the family doesn’t share my love of nuts in cookies.  Crazy, I KNOW!  Anyway, here is the recipe:

Oatmeal/Chocolate Chip/Coated Candy Cookies

1 cup I Can’t Believe It’s Not Butter – softened

1 cup white sugar

1 cup packed brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 1/2 teaspoons ground cinnamon

3 cups quick cooking oats

1/2 cup chocolate chips

1/2 cup coated candy

Preheat oven to 375 degrees.

Cream together I Can’t Believe It’s Not Butter, white sugar, and brown sugar.  Beat in eggs one at a time and add vanilla, baking soda, salt, cinnamon stirring well.  Add flour and stir until mixed in.  Mix in oats (I do 1 cup at a time).  Finally add chocolate chips and coated candy.  Try not to eat all the dough at this point because it is yummy.  Normally I have an audience at this point if they don’t already know I am baking.

Set your Silpat® baking sheet liner on your cookie sheet and drop tablespoon (ish) sized balls about 3 inches apart on the liner.  Bake 9-11 minutes in your preheated oven.  Cool on wire rack.  Eat with milk.  Or coffee – I love cookies and coffee.

It is tough to keep these around more than a day.  I hope that your family enjoys them as much as my family does!
