- 1 tbsp oil
- 1.5 lb chicken livers cleaned
- 2 cups chicken stock
- 10 peppercorns
Method: First things first, you press the ‘saute’ option and heat the oil in your Instant Pot. Then you add your freshly prepared chicken livers and leave them to cook for 3 minutes. Next, add the chicken stock and the peppercorns. Keep the lid shut and cook it at high pressure for 5 minutes.
When the cooking time finishes, make sure you wait 10 minutes for the pressure to release. After that, you are ready to serve up and enjoy!
Chicken Livers And Chorizo Sandwich
If you are after a speedy and flavorsome dish, then this is the one for you.
- 30g of butter (just over 2 Tablespoons)
- 1 shallot finely chopped
- 2 crushed garlic cloves
- 200g chopped chorizo (just under 1/2 lbs)
- 4 slices of bread (of your choosing)
- 300g of chicken livers (2/3 lbs)
- 3 tbsp of double cream (heavy or whipping cream)
Method: First, heat up your frying pan to melt the butter. Add shallots and garlic. Then, continue to stir until it softens. Next, reduce heat to medium and add the chorizo. You’ll want some of the oils to release. After that, add the chicken livers and let them sear for a few minutes.
While that’s cooking, put a hefty helping of butter on each of the slices of bread. Add the cream into the pan and give it a good stir. Chicken Livers And Mushroom Nests
This dish is a comforting and filling starter that tastes like little bites of heaven. It takes a bit more preparation than the other dishes, but it is well worth it.
- 2 tbsp of oil
- 3 onions – chopped finely
- 250g (~8 oz.) pack chestnut mushroom (white or cremini mushrooms work too)
- 2 crushed garlic cloves
- 400g (~1 lb.) pack chicken liver
- 140g (~3/4 cup) white breadcrumb
- 50 grams of chopped up walnuts (about a handful)
- Finely chopped bacon
Method: Get yourself a nice big frying pan, turn the heat up and begin heating the oil. Soften the onions for about 5 minutes (or they become translucent), then add the mushrooms and fry for a further 10 minutes.
Next, stir in the garlic and cook for a couple of minutes. Pop these aside in a bowl and put the livers in another pan. Cooking time can vary but just aim for it to be golden on each side.
After that, you are going to mix up the livers with your chopped walnuts and cooked bacon (fry separately to your desired doneness).
Scoop out the middle of the mushrooms turning them into little bowls, where you will put your mixed-up stuffing. Bake for 25 minutes and then it’s ready to serve.
