This salad may sound sound like a strange combination to some, but the flavors mesh perfectly and the textures are right on spot. Avocado Fruit Salad? It really works. Banana and avocado have the same consistency and similar mellow flavor and they blend together so well. The carrots add a little crunch and added sweetness. If you haven’t heard of an Avocado fruit salad boat before, you are in for a real treat. The fruit salad “boat” (and the pineapple dressing of course) just makes it a little more fun!
Avocado fruit salad boats with creamy pineapple dressing
These little fruit boats made out of avocado shells are such a clever way to serve this dish. After all, why not serve it in the form it came in, right? Avocado fruit salad boats would be perfect for a bridal shower brunch, and it’s the perfect healthy baby shower brunch recipe too!
A little bit tropical
I mentioned above that they can be served for brunch, but I didn’t mention that your family would also probably love it if you made these especially for them sometime, either for breakfast or served with lunch. The Avocado Fruit Salad Boats can also be served as a starter dish or as an afternoon refreshment at an outdoor summer party. The creamy pineapple dressing reminds me a little bit of a Pina Colada, or being on a tropical beach! Put a little umbrella in each boat and you might just feel like you’re on vacation. With the rich colors of the fruits and vegetables inside, and the deep green shell of the avocado on the outside, it’s not only a treat for the taste buds, but a feast for the eyes.
It’s all in the cut
Aside from the combination of flavors of this salad mixture, what makes these little fruit cups so unique and pleasing to the eye, is the small cut. Each ingredient is cut into small, same sized cubes. These tiny little pieces are just kind of fun to eat, as with each spoonful, you almost always get a piece of each fruit and veggie. You get all of the flavors in each bite, while also knowing that you are taking advantage of the health benefits of avocados!
If you haven’t noticed by now, I adore unique but easy salad recipes, and I am really in love with the avocado fruit salad boats with creamy pineapple dressing.
- 1/2 banana
- 1/2 red apple
- 1/2 green apple
- 1/2 firm but ripe avocado
- 1 medium carrot
- 1 pineapple cup in (with juice)
- 1 tablespoon mayonnaise
Cut avocado in half and remove pit. Carefully carve out both halves of avocado, keeping them intact and chop into small pieces (you can use just half or the whole avocado).
Chop all ingredients (except the pineapple) into 1/2" - 3/4" size pieces, and put in medium sized bowl. In a separate small bowl, drain the juice from the pineapple cup and add mayonnaise. Whisk together until smooth.
Add the pineapple to the rest of the chopped fruit and mix. Pour the pineapple sauce over the chopped fruit, and gently spoon sauce over the top until all pieces are coated. Fill both halves of the hollowed avocado "boats". Enjoy!
If you want more "crunch" in your fruit salad, you can add some chopped pecans, walnuts, or whole pine nuts!
You can refrigerate this salad for up to two hours or so (cover if doing so). It is delicious right away too, without refrigeration!
