Candy Showers Cookie Bar

Don’t say a word. Not one single word about how unhealthy this recipe is. I am fully aware that it might contain a few calories *cough*, but we all know about moderation, right?   I guarantee it is one of the tastiest things you will ever eat! Below is the recipe for a single batch, but I always double mine.  I usually use some of the dough for the bar pan and the rest I make cookies with.

CANDY SHOWERS COOKIE BAR RECIPE:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 sticks butter, softened
1/2 brown sugar, firmly packed
1/2 cup granulated sugar
1 egg
1/2 teaspoon vanilla
3 cups milk chocolate chips (about 1 1/2 bags)
3/4 cup peanut butter

Preheat oven to 375 degrees.  In large bowl or mixer, blend butter, brown sugar and granulated sugar until creamy.

Add egg and vanilla extract and and blend.

 

Combine flour, salt and baking soda and mix into sugar mixture:

 

After dough is blended well, add 3/4 bag of milk chocolate chips. I happen to love the brand below – they are big and so tasty!

Spread dough into a jelly roll pan (15 1/2 x 10 1/2 x 1″) or large cookie sheet with high edge.  It may seem like there isn’t enough dough, but there is.  You can use the back of a spoon to help spread it out (or wet your fingers to help). Bake at 375 degrees for about 14 minutes.  I check on it frequently as we like our cookies gooey.  You do need it firm enough for the next step. After you pull the pan out of the oven, let it sit for about 2 minutes.

Sprinkle top of cookie with remaining chocolate chips.  Then divide the peanut butter into three big globs and place on top of  the cookie/chocolate chips.

Let everything sit for about 3 or 4 minutes until they start to melt. Very carefully, use a butter knife or spreader and slowly spread/blend the melted mixture on top.  This process has to be done slowly so that you don’t  ruin the cookie.

Now comes the fun part! Shower your cookie bar with candy. Make sure you do this while the glaze is still “wet” so that the candy will stick. I use M & M’s and peanut butter cups (if using large ones, you can cut them into quarters, or if using bite size cups, cut them in half). You can add any kind of candy you want!

You can also mix things up a bit for Halloween and make the cookie bar the same, except instead of using all of the M & M colors, just use the orange M & M’s, and the mini peanut butter cups. Voila – you have a fun and festive Halloween dessert!
