Country Crock “Spread the Love of Vegetables”

I was excited to get to do the Country Crock review because of their Spread the Love of Vegetables campaign. Country Crock is working to help parents and families get excited about eating their vegetables. When I was growing up my great grandmother only made me eat the basic veggies and I didn’t get around to trying more until my 20’s. Now, there is rarely a vegetable that I will turn down. I enjoy trying new recipes and new veggies for my family.

Country Crock aims to help by making vegetables even more delicious. With 70% less saturated fat than butter, Country Crock ensures your veggies are not only nutritious but also delicious!  With butter containing 11g total fat and 7g saturated fat per serving Country Crock is a great alternative.

I received a Veggie Party Kit from Country Crock packaged nicely in a reusable grocery tote. I can never have too many totes.


In addition to the Country Crock sample it also included “Today I Ate a Rainbow” kids’ calendar which my girls couldn’t wait to open! There are enough magnets that you can have 4 kids participate. Piper really took it seriously and told me “I have to eat carrots with my lunch so I get the orange (fruit/veggie) done”.


Also in the party kit was a fun VeggieTales kids’ apron and VeggieTales Veggie Garden kit. These will be our girls personal plants this summer and I can already see the pride they are showing in watering and caring for them. Digging in dirt is so fun for kids so I try to make our family veggie garden like an outside game. Weeding is the hardest to get them to do. Someday.

I blogged about my husband losing 25 pounds and it was mainly due to him eating mostly fresh vegetables and lean meat. Country Crock included a fabulous veggie cookbook in the party kit that I have picked 3 recipes to test out. The first recipe was Baked Eggs with Artichokes.

We had it for brunch on Sunday. Everyone loved this recipe. My only change was adding a few strips of bacon.

The second recipe that I chose to make was Shrimp with Spring Lettuces. It had all of my favorite ingredients included in in so I couldn’t pass up making it. Absolutely delicious! We had this more as a side salad than a main course. It was served with baked chicken breasts and the 3rd recipe that I tried out of the book, Roasted Teriyaki Sweet Potatoes. Huge hit!

I used to hide them and blend them, then realized they need as adults will grow and need it hidden so I got them into helping shop, grow and cook..we try new vegetables and some they love, some not but we try and they know how healthy their bodies need to be to function. Spaghetti squash is a fun one too to get them to cook. We also grow and garden so they are excited at the progress.
