Creamy Cashew Chicken Stir-fry

Mom was an awesome baker, and everyone loved all of her cookies, but her peanut butter cookies were extra special. When we made these, my job was to roll the dough into balls, then roll them in sugar and press then flat using a fork. Oh my gosh, these were so good, especially right out of the oven.  Cooking with my mom, during the years of my childhood, are some of the memories I treasure most.

There is just something special about peanut butter. For my family, it means “comfort” and of course “tasty”. My husband and daughter are the biggest peanut butter fanatics I know, and they enjoy pretty much everything I make that uses it. It can be used in so much more than just baked goods and sandwiches – I often include when I prepare dinner too.

Needless to say, I was intrigued when I heard that Jif (who happens to make the best peanut butter around, in our opinion), also makes almond and cashew butters. OH MY. As I mentioned above, I have always enjoyed cooking with peanut butter, so to be able to create new recipes using other nut butters just tickles me to no end. Now this was going to be fun!  I already mixed things up a bit, when I created my Autumn Almond Muffins recipe using Jif Almond Butter, but this time I wanted to create something for dinner, using Jif Cashew Butter!

I created a fantastic (if I do say so myself!) recipe that I think your family will love. My family went nuts (pun totally intended!) when I served this Creamy Cashew Chicken Stir-Fry, which used Jif Cashew Butter. I actually doubled the recipe, since I was going to service with rice, and just because I wanted extra of this delicious sauce.

Creamy Cashew Chicken Stir-Fry

Ingredients:
6 chicken breasts, cut up into small pieces
1 Cup Jif Cashew Butter
1/4 cup soy sauce
1/2 Teaspoon Red Pepper Flakes (you can add more if you like to spice things up)
1/4 cup white wine vinegar
1 1/2 Tablespoons brown sugar
3 cloves crushed garlic
1/4 cup peanut oil
4 green onions sliced

Preparation:
Cashew Chicken,stir-fry,cashew butter,Jif

In a large bowl, combine Jif Cashew Butter, soy sauce, red pepper flakes, white wine vinegar, brown sugar, garlic.

Whisk together until smooth.

Add peanut oil to large skillet or wok and add chicken.  Cook until over medium/high heat until chicken is no longer translucent. Drain and add peanut sauce. Stir to coat all pieces.

Turn heat to medium/low heat and cook for about 7 minutes, add green onions and serve. Sprinkle with sesame seeds. This can be served over rice or noodles. YUM!

Is your mouth watering yet? I have a feeling that my family will be requesting this quite often. I was hoping to have leftovers so I could enjoy it the next day, but no such luck.

    Oh boy, that cashew chicken looks so yummy! I’m excited to try out the almond butter since my son is allergic to peanut butter. I think an almond butter choke recipe would be a great way to mix up our dessert!

    I didn’t know they mixed up jif like this my kids love peanut butter but I am not a fan they would love this though.

    What a great way to mix up the usual mealtime routine! The Jif Cashew Butter probably would be awesome in many other Asian themed recipes as well. I bet I could probably use this in my favorite quick sesame noodle recipe too!

    Yes, my mouth is totally watering! I didn’t know that Jif made other nut butters. My husband and son go though so much peanut butter, and I know that these would be a hit here too. I really want to try the almond butter!

    Interesting recipe. I remember homemade PB cookies too. Too bad I’ve learned I’m allergic as an adult. I’d love to see about making almond cookies. Thanks for sharing the recipe.

    Oh my gosh, I LOVE cashew butter, but I had no idea you could buy it! I have always made mine and I always wondered, “Why doesn’t anyone sell this?!” 🙂 That sauce looks absolutely amazing!
