With Easter this weekend I am sure that you are already in the planning stages of what you will have for your holiday brunch (I am too – and thanks to Eggland’s Best for *sending me goodies for this post!).  When you go to the grocery store to gather your ingredients make sure that Eggland’s Best Eggs are on your list.  They are truly superior in nutrition to the regular egg.  In fact not all eggs are created equal.

Our youngest is my helper for sure.  She is really doing a great job of cracking eggs and stirring the batter. The Salted Caramel Brownies turned out delicious!

We also had Spinach & Cheese Quiche and yummy Banana Bread!

Another girlfriend brought some fresh Bruschetta with a mix of toasted and herb toasted bread.  Seriously I might have camped out in front of the platter for 10 minutes or so.

A brunch is not complete without fruit.  A very patient mama friend put these rainbow skewers together for the kiddos.  I know she has patience because I put together about 50 of these for a birthday party once.  They are pretty though aren’t they?  The pineapple was perfectly ripe and sweet.  So amazing!

  1. My go-to brunch recipe is quiche. I love making quiche because I can use seasonal vegetables, and at this time of year, it’s hard to beat a good asparagus quiche.

  2. I make a breakfast muffin–biscuit dough pressed into a jumbo muffin tin, soft, but cooked bacon pressed into an X on top, an egg cracked over, then baked until the egg is cooked.

  3. Mine is a sausage/bacon casserole with toast and fresh fruit like raspberries.bananas and blueberries if in season.

  6. I like to make a really yummy egg receipe. It has eggs cheese mushrooms whatever meat you have on hand and pretty much whatever veggie you have on hand pour it all together cover with cheese and bake until fluffy and delicious!!

  7. I have a peaches and cream french toast recipe that is sooooo good. Prepare the night before and bake in the oven in the morning.

  8. “brunch” for us is when we sleep in on a weekend day and I make them the traditional homemade biscuits and gravy, bacon, sausage, eggs and salmon patties….

  9. For Brunch, You can’t go wrong with Lox and cream cheese and capers on toasted bagels, filling and quite impressive.

  10. Usually we just have a burrito or something with eggs and bacon, but their Baked Eggs, Ham and Asparagus in Tomato Cups recipe looks really good!

  11. Sausage, mushroom, bacon, onion, green pepper, cheese omelet served with sausage gravy and buttermilk biscuits and home fries.

  15. Eggs….fried in coconut oil and/or butter. Sometimes with ground beef, veggies added in (if at home).
