We have a few gadgets in our kitchen. But one that has been on my wishlist for some time is a pressure canner. In the last couple of years I have “put up” a variety of foods. Jams, fruits, pickles, and sauces – all being high acid foods. A pressure canner would allow me to safely can low-acid foods {i.e. proteins, green vegetables, and broths/soups}. So I was thrilled when I learned that Fagor wanted to send me their Duo 9 Piece Pressure Canning Set to experiment with. [*]

That’s us, in a nutshell. We may splurge on occasion, but the most the time we are strict with the foods we eat. At least, I have to be. The Fagor Duo Pressure Canner has helped us with our “back to the basics” approach in the kitchen. Since receiving it, I have created a few delicious dishes for my family.
I admit, at first I was slightly intimidated to use something that I have seen celebrity chefs use time and time again. I can throw down in the kitchen, but I am certainly no chef. I was relieved to find that The Duo Pressure Canner was actually simple to use! I read the instructions to get familiar with the basic how-tos and dove right in.
* This pressure canner/cooker can be used on all stovetops; gas, electric, induction, or ceramic. * Pressure canning is the only safe method for preserving low-acid foods with a ph level higher than 4.6 * Cans up to 4 quarts at once!
How does it work?
Once sealed, the boiling point of water increases as the pressure rises. And through the magic of science, food cooks faster without compromising the taste or quality of your food. There are two pressure settings on the Duo: Low – 8 psi {lbs per sq. inch} and High – 15 psi.
I experiment in the kitchen. So my approach is “fly by the strings of my apron“, meaning I don’t have exact recipes to share. For recipe ideas and inspiration you should definitely check out Fagor’s library of pressure cooker recipes!

I learned rather quick that when cooking beef it is a good idea to set the timer on the shy side and cook longer if need be. So our first roast beef was a little more well done than I prefer, but it was still delicious and it was cooked perfectly for Luv!
Bone Broth – Homemade and Home canned
I also pressure cooked my trusty organic chicken bone broth. I use organic veggies {I save and freeze scraps like onion peels for broth}, fresh herbs, and save organic chicken bones and organ meats from our roasted or rotisserie chickens. I don’t add sea salt to the broth until I put it to use in a recipe. What normally simmers most of the day, only took 15 minutes once it reached pressure. I was amazed! After that, I washed everything and started sterilizing jars. That’s right! I canned my own broth!

Once the jars were filled and high pressure was reached, the canning process took less than an hour. Then I carefully placed the jars on a towel and checked the seals in the morning. Pressure canning my broth worked brilliantly!
Strawberry-Rhubarb Compote
I experimented once again and made an organic strawberry-rhubarb compote {which I later used to make paleo ice “cream”}. I brought equal parts organic strawberries and sliced organic rhubarb to high pressure with 1/2 cup filtered water. I let that process for 5 minutes and removed from heat, letting pressure release on its own. Perfectly cooked.

I am impressed with how efficient the Duo Pressure Cooker is. It is a workhorse that will be put to great use throughout the summer months especially. Not only does it minimize energy use, I no longer dread the idea of canning summer goodies. I won’t be chained to a boiling water bath canner this summer! *hooray!*

My Mother had one years ago that she used all the time for cooking and canning and one day my Father (who is the house cook) decided to make a nice beef roast in the pressure cooker however when it came time to take the lid off no one could get it to open. They ended up throwing it away unopened roast and all lol We had hot dogs instead. I’ll never forget it because my Father was not impressed to say the least. This set looks wonderful!

I just purchased the Fagor 10 qt canning set to try my hand at pressure canning these mountains of green beans I have this year. So first time pressure canning dummy question. I can find nothing in the handbook that comes with the set to tell me how long to process green beans. Or anything for that matter. I’ve looked on the internet and it says 25 mins. But confused as the recipe for mixed vegetables in the book says to process 90. Is there a difference in regular pressure canners and the Fagor as to processing times? I plan to do this today so any info from anyone that has used the Fagor successfully is much appreciated!!!

I just grabbed my manual in the hopes that I could help answer your question. The processing time depends on the PSI. From what I understand of “most” pressure cookers/canners, the canning times are written for 10 PSI. The Fagor Duo pounds per pressure per square inch is set to 8 PSI for the low setting and 15 PSI for the high setting.
The only veggie I have canned with the Duo this summer is pickles – so I’m not sure those are a fair comparison. But looking in the manual the processing time for the mixed vegetables is 55 minutes on the high pressure setting for 4 pints – placed on the rack with 2-3 inches of hot water and 1-inch headspace for the jars. The mixed vegetable recipe includes green beans, which is probably your closest/safest bet. I hope that helps! Happy canning!

Ok…my thoughts after canning all those green beans yesterday. Keep in mind I have never pressure canned, only water bath canning and have done that for years.
Number one and a biggie!…Fagor DEFINITELY needs better instructions for the canning pressure directions! Specifically times for processing low acid foods. They say ‘refer to processing times’ but there are no processing times in any of the books they provide. Looking at the Ball Canning guidelines they say to process at 10PSI. Fagor processes at 15PSI on their number 2 setting. So for newbies do you decrease the times? I didn’t, I processed my beans at the number 2 setting for 25 minutes which is the recommended time accorded to Ball’s canning guide. Will they be ok? I have no idea. Will we all die from Botulism? I hope not! I’m almost afraid to even eat them. lol
Number two….They specify in their directions to place your jars (I used quarts) on the ‘rack’ and lower into the canner. There is no way you can do that. You can see that right off the bat. So don’t expect the kit to come with your typical canning rack. There are no sides, sections or handle to lift or lower the jars into the canner nor is there anyway to keep the jars from touching. Luckily I didn’t have any break.
Number three: I sterilized everything. The handle on the ladle came off. Probably just a fluke but still…..
Overall it was easy to use, but like I said…is my food safe to eat? Please Fagor include better directions for people to have better peace of mind! I have a glass top range and it’s a big no-no to use those for canning so I needed a canner to use specifically on my induction cooktop. So it had to be stainless and it had to be a smaller canner. I didn’t really want to do large amounts anyway so it’s perfect if you just want to can a few jars. I did two batches. It came up to temp and pressure quickly. That was nice.
Hope this helps anyone like me that is a first time pressure canner of anything low acid. I definitely will not use it for canning tomatoes, salsa, spaghetti sauce, pickles, relish; etc as it would take all day or several days to do the amounts I do but for those of you that only want a few jars of something it would be perfect.
