I mentioned a few days ago about the The Motherhood Virtual Cooking Class that I would be co-hosting with The Motherhood. The class was so much fun, and myself and the other bloggers who were co-hosting, practically left drooling (okay, I have to admit…I’m pretty sure I did!).
Chef George Duran prepared some great recipes using leftover turkey…we shall now call them Left-uppers. He answered our questions, then began preparing some amazing recipes!
Leftover Turkey and Stuffing Enchiladas – mmmm
To kick off the first class on Nov. 15, 2011, Turning Leftovers into Left-Uppers, celebrity chef George Duran joined an enthusiastic group of moms via live feed video to discuss ways to repurpose Thanksgiving leftovers into new, special meals. He also demonstrated one of his own left-upper recipes featured on ReadySetEat.com.

We also talked about food safety during the holidays, including how long you can freeze leftover, cooked turkey (if you happen to have leftovers, as my buddy Deb Thompson pointed out!). George suggests that you use it within 2-6 months. You can see the rest of the tips on the video 🙂

Eating healthy was another topic we discussed, and there was some fabulous ideas for both leftover and fresh turkey and ham. Turkey Lettuce Wraps are a great idea…do you see that picture above? Yum-o.
I never think to use ground turkey instead of ground beef, but this is exactly what George suggests. He also reminded us that kale is a great leafy vegetable to use in dishes – it is very good for the body (full of antioxidants). I mentioned that I have never cooked kale! One a side note, last night I made a healthy chicken enchilada and I used fresh baby spinach leaves in the layers…next time I might try it with kale.
We discussed child hunger as well, and how ConAgra’s Child Hunger Ends Here program can help to provide meals to those in need. I was part of the Child Hunger Ends Here program, and I can tell you it is amazing. Please keep your eye out for specially marked ConAgra products in your grocery store – every bit helps!

I am so happy that The Motherhood has brought back their Virtual Cooking Series, and I can’t wait to see what they have in store for the next show! The Motherhood Turning Leftovers into Left-Uppers Virtual Cooking Class was so much fun, and I am just thrilled to have been a part of it.

OOOh those enchiladas look delicious! I’m sure we’ll have leftovers this year since our Thanksgiving gathering will be much smaller, so we just might have to try those. Thanks for sharing!

We do the usual left over turkey sandwiches, followed by Hot turkey sandwiches lol. I love the idea of the turkey enchiladas. I make chicken enchiladas all the time but never thought to try it with turkey. We will definitely have these after Thanksgiving 🙂

The turkey enchiladas look amazing. We make turkey alfredo pizza out of some of our Thanksgiving leftovers.
I am also loving the enchilada idea! I actually bought all the things I need for CHICKEN enchiladas, but that would be silly…I can use already cooked turkey! Hoorah! I am also thinking turkey wraps would be good!

My husband, teen, and tween all love wraps, but I’m not fond of the pita bread for some reason (which is odd because I love bread). I’ve never considered making a lettuce wrap…but I gotta say that Turkey Lettuce Wrap looks fantabulous. Thank you for the great idea!
I found an idea this year that we tried and loved it. We rolled up stuffing in the left over turkey so that they looked like mini enchiladas and then we poured gravy over the top and baked. It came out great, used up the leftovers and everyone was happy.

These are novel ways to use the leftovers. We had a lot of turkey leftover this year and munched on turkey sandwiches for the next couple of days
