Peeps Easter Bunny Rice Krispie Treats
I have a blast creating Festive Rice Krispie Treat goodies, and now that Spring/Easter is almost here, I am at it again!
We all know how cute and colorful Peeps are, and I thought it would be fun to incorporate them into my Rice Krispie Treats, in the shape of bunnies, without having to add more coloring to the mix.
You will need:
- Large box of Rice Krispies (use 3 cups for each box of Peeps)
- Butter (2 Tablespoons for each box of Peeps)
- Peeps (1 Box per batch)
- Parchment Paper
- Cooking spray
- Bunny shaped cookie cutter (I found mine at Michael’s, right next to the Peeps!)
It is important to have everything all set up before you begin, as your hands and bowls will be really sticky, and you will need to move quickly, before the gooey mixture hardens. I used a large glass bowl to melt the butter and peeps, and pre-measured 3 cups of Rice Krispies in the large plastic mixing bowl. After each batch I washed and dried both bowls and used them again for the next batch. I spread parchment paper out on the counter and lightly spritzed with cooking spray.
I actually made four batches (separately), melting each differently colored box o’ Peeps with 2 Tablespoons of butter. It will depend on how your microwave oven operates (some heat slower than others), so I would suggest starting with 40 second increments, and stir each time, until the butter and Peeps are completely melted and gooey.
Bye little guys. Into the microwave you go. Yes, I felt kind of guilty putting something so cute in the microwave. It just felt…wrong.
Funny thing – the eyes on Peeps do not melt! I was confused at first when I saw tiny brown specks. Don’t be alarmed, as they kind of blend in the mixture.
Pour the Peeps mixture over the Rice Krispies and mix well (and quickly), until all of the cereal is coated. Turn mixture out onto parchment paper and let it sit for about a minute. Careful – mixture might be hot!
Apply cooking spray to your fingertips and press down on mixture until it is about 1″ to 1 1/4″ thick (or even thicker if you want). Place your easter bunny cookie cutter on top of the mixture and press down hard. Pull the extra mixture away from the cookie cutter.
This part is very important: Before you remove the bunny from the cookie cutter, press down some more (even the ears!) to make sure that the bunny is solid and sturdy. To remove the bunny from the cookie cutter, gently push, starting with the ears, moving from top to bottom until the bunny is released.
While the bunnies were still a little gooey, I added eyes and noses, using round sprinkles (discs). For the noses, I broke a sprinkle in half and placed it sideways right below the eyes.
I continued to melt the different colored Peeps, and repeat the process above. Make sure you place them on a flat surface after you cut them, otherwise they won’t harden flat. Refrigerate until ready to serve.
When I was done I had a plateful of colorful Peeps Easter Bunny Rice Krispie Treats!
