And you just thought I was done with yummy, festive Easter Rice Krispie Treats! I hope you enjoyed my cute little Peeps Easter Bunny Rice Krispie Treats (and if you haven’t made them yet, what are you waiting for?)!
Today I bring you something that I think is just adorable – Rice Krispie Treat Easter Eggs. These are super easy to make, and they are the perfect addition to your Easter table setting, or just to snack on in the morning, after the Easter bunny has left and all of the real eggs have been found. What you will need: 6 cups Rice Krispies Cereal (divided into 1 1/2 cup portions) 1 bag multi-colored marshmallows 4 tablespoons of butter (divided into 1 tablespoon portions) Cooking spray (or a little butter) for greasing spoon, hands. To make these eggs, I used a bag of colored marshmallows (fortunately they were all spring colors), and divided them into bowls, by color.
You will be working with one color at a time. In a glass bowl, melt one of the marshmallow colors with 1 tablespoon of butter. Microwave for about 45 seconds, and stir briefly. Continue to microwave in 30 second intervals until marshmallows and butter are completely melted. Mix thoroughly. Add 1 1/2 cup of Rice Krispies to the bowl, and blend until the cereal is coated. Turn this mixture out onto parchment paper and run hot water in the glass bowl (for it to be soaking, for easy cleaning, for your next batch!) Form into oval egg shapes. You can make them any size you wish, but I made mine about the size of a regular egg. If you are serving these at a party, you might want to make them even smaller, to go further.
Continue the same process with all of the colored marshmallows. Store in refrigerator, or covered on counter for up to 2-3 days (or until gone). 🙂
On a side note: I found this cute little basket at the Goodwill Store. It was just a regular tan basket, but I decided to pretty it up a bit by painting it with different color acrylic paints, then lightly sanding it. Don’t forget to check out the other Easter recipes on Eighty MPH Mom!
