With little boys and busy schedules (especially while moving) dinner time, and even lunch for that matter, can get a bit hectic. Rushed meal times are certainly no fun and skipping out on the nutrients that my children need is certainly not something that I’m keen on. Thankfully, thanks to the internet, there is an endless amount of quick recipe idea right at my fingertips. Ah, technology! One thing, however, that is often looked over are side dishes. Sure, we can have baked chicken, pasta salad, or burgers on the grill but what shall we have with it? Now, I don’t know about you, but when we’re in a bit of a time jam, we almost always opt for potatoes. And I don’t mean the cliché, lathered in grease and fried to oblivion, French fries either.
Not too long ago, I was introduced to a new (to me anyway) potato product that makes the perfect side dish for any meal. McCain Foods potato products are certainly unlike any other.
With a slew of products available, in all of which the company does their best to limit the bad-for-you, natural ingredients, McCain products are a good choice for your family and home.
One of the main reasons, aside from the nutritional aspects when compared to similar products, is the convenience of McCain. The simplicity of adding potatoes to any meal without the time consuming peeling, boiling, etc. is a huge bonus in our home. With little ones, I feel very strongly about having family dinner time. Even if that means waiting until a bit later than usual to insure that Daddy gets to join us, we’ll do it. Sometimes we sit down to a properly planned meal ready in advance and, other times, we’ve had our rushed dinners. It is all according to how the day has gone but, in the end, all of us will be around the table together. Enjoying our meals as a family allows us that much needed quiet time to chat about how our days have gone, to be near to the ones that we love, and to be exactly that – family. I wouldn’t trade our family meals for anything and if that, sometimes, means that we’re skipping out on some of the good-for-you foods here and there, so be it. Thankfully, however, with McCain we don’t have to skip out on anything.
All of their products are equally amazing and – huge bonus! – they even offer an adorable kid friendly option! The McCain Smiles are what originally turned me onto the brand. With little ones, anything smiley-faced has got to be good, right? Both of our kids are, from time to time, picky eaters. Our youngest isn’t a fan of, well, much of anything aside from ice pops. But these, he LOVES these!

Whether we’ll be using them alongside a feast as a little way to brighten our day or if we’ll use it to add some nutritious value to a quick meal, they’ll be here. Now, for those of you that aren’t too keen on still having the sort-of-kind-of French fries as a side, McCain offers an awesome array of “adult” potato products as well! These are definitely a bit more up my alley. As a meat and potatoes kind of girl, a nice steak dinner and a side of McCain potatoes is a-okay with me! One of my personal favorites is the McCain Purely Potatoes Russet Potato Slices.
Seriously, can you even begin to imagine the massive amount of deliciously amazing casserole possibilities?! Considering the fact that scalloped potatoes are a favorite of mine, the recipe direct from the McCain website is a great place to start.
McCain Purely Potatoes Quick Scalloped Potatoes
Ingredients:
- 24oz bag of McCain Purely Potatoes Russet Potato Slices
- 2 tablespoons of butter
- ¾ cup of onion (minced)
- 2 cups of heavy cream
- 1 cup of shredded parmesan cheese
- ¼ teaspoon ground nutmeg
- Salt and pepper to taste
Directions:
- Preheat the oven to 400˚ F.
- Empty the McCain Purely Potatoes Russet Potato Slices into an 8×8” casserole dish. Spread into a roughly even layer with a spoon or spatula.
- Melt the butter into a small sauce pan. Saute the onions until soft and fragrant. This will take about 5-7 minutes.
- Add the cream to the onions. Season the mixture with salt, pepper, and nutmeg.
- When the cream comes to a simmer, remove the pan from the heat source. Stir in ¾ cup of the parmesan cheese.
- Pour the sauce over the casserole dish full of potatoes. Gently stir the potatoes as necessary to ensure that they are all coated evenly with the sauce.
- Top the dish with the remaining ¼ cup of parmesan cheese and bake for 50-60 minutes until the potatoes are tender and the cheese on top has browned.
Trust me, if you make this dish, you WILL enjoy it. There is absolutely no doubt about that. With McCain potato products, you cannot go wrong. Be sure to head on over to your nearest grocery store to pick up a bag!

I didn’t know they had Purely Potatoes. I will be on the look out, because my husband loves fried potatoes and this would be easy.
I’ve never heard of this brand but I’m going to look for it next time I’m at the store. I like the “adult” options!
