GARLIC BUTTER GRILLED CORN

Ever since I was little, I have adored corn on the cob. Of course I also loved canned and frozen corn, but there is something extra special about fresh corn on the cob. There are so many options for cooking it too – it can be boiled, grilled or baked. I have been experimenting with recipes for corn on the cob and I am always on the lookout for new ways to prepare it.  Before I decided to use my own recipe to feature in this post, I browsed the Sunshine Sweet Corn corn recipes, where I found some delicious looking recipes that I will be trying this summer. The Corn Chowder sounds amazing (as does the Cilantro Lime Butter!).

One of my favorite ways to cook corn on the cob is on the grill, still in the husk.  One of the things I love so much about Sunshine Sweet Corn is that it is so versatile.  There is no chance of getting bored, when there are so many options for cooking it.  And if you think fresh corn is only for summertime barbecues, think again – it is perfect in the Spring too (which is perfect for getting the whole family in the mood for summer), and is also available year-round!

Corn is a great addition to a meal – not only does it taste pretty amazing, it is very beneficial to your body. Let’s talk about a few of the health benefits of corn:

Whole grains, like Supersweet Corn, are an essential part of a healthy diet that have been linked to a lower risk of heart disease, diabetes, certain cancers and other health problems. The healthiest kinds of grains are whole grains. Whole grains are better sources of fiber and other important nutrients, such as selenium, potassium and magnesium.

If you are looking for a high fiber food, corn is a great choice. As I grow older, I get more concerned with my digestive system (sad, but true).  My mother was diagnosed with colon cancer shortly before she died, so I try to make sure I do everything I can to keep the digestive tract healthy.  Not only is fiber important for digestion, but it also helps to keep your blood glucose levels in check – something else very important to me, as my dad had adult-onset diabetes.

Recent studies have shown that sweet corn is one of the best dietary sources of two antioxidants (lutein and zeaxanthin) that help promote healthy vision and protect eyes. In addition to  protecting against cataracts and chronic eye disease, lutein can help prevent hardening of the arteries (which can lead to heart attack and stroke). I had no idea that corn was so important for eye health!

Now, on to my recipe – Garlic Butter Grilled Corn on the Cob! This is so simple to make, but judging by the taste, you would never guess this.  Here are the steps I took to create the perfect corn on the cob:

Ingredients:
3 or 4 fresh Sunshine Sweet ears of corn
1/2 stick butter
3-4 cloves of crushed garlic
1/2 tsp. sea salt
1/2 tsp. paprika
1/4 tsp. dry mustard

Quick corn on the cob tips:
-When you buy corn on the cob, always peel back the husks just a bit at the top to make sure that the corn isn’t dried out or dark.  You want it to be fresh and perfect.
-Corn on the cob can be stored in the refrigerator for up to five days. When you bring it home, you can either shuck it, or keep it in the husk. Sweet corn will stay fresh if stored properly and refrigerated – simply place corn in a ziploc bag, or airtight container.

Preparation:

Rinse the corn under cool water, and pull the husks down to the bottom. Remove only one layer of husk from one of the ears to cut into strips to tie around the top of the cob, and set it aside. Don’t remove the rest though, as the husks will be pulled back up around the corn before grilling.  Remove the silk/strings and rinse the corn again.

Soften a half cube of butter (use more for additional ears of corn).  Press 1 clove of garlic per cob, into the butter.  Mix well. Put sea salt in a small bowl, and in a separate bowl mix the paprika and mustard together.

Spread the butter evenly over each ear of corn, then sprinkle with sea salt, followed by a sprinkling of the paprika/mustard mixture.

Carefully pull the husks back up over the buttered & seasoned corn, making sure that it is entirely covered. Cut the extra husk layer (that you saved), into strips – one for each ear of corn. Carefully tie one strip around the top of each ear of corn, to hold the husks together.

Place ears of corn on the top rack of the BBQ grill. You might want to start cooking this before your meat goes on, depending what kind of meat you will be grilling and the time required for it. Make sure the heat isn’t too high. Turn frequently until each piece is a light brown color (about 25-30 minutes). Keep a close eye on them, to prevent burning.

Don’t worry if husks open up a bit.

  1. I couldn’t agree with you more-There is nothing like good old fashion corn on the cob that just completes a BBQ meal ^.^

    The only bad thing these days is all the corn seems to be GMO unless you opt for organic o.O

  2. I love corn, being originally from Kentucky, and living in Largo-Clearwater, FL area (I grew up in Tampa), bu grilled or very slowly-broiled works so well. I find that pulsing garlic or steaming it til it’s rather soft and then mixing it with butter also does good. Then you can use the garlic butter rub to put on bread, yum!

  3. Oh I love love love corn, in fact we are having grilled corn with dinner tonight! And I am gonna try the garlic butter recipe! Garlic, corn, steaks goodness they only thing I’m missing is the sun! Lol

  4. Yum! I like buying up as much corn as is feasible, cooking it, cutting it off the cob, then freezing it for future use = less preservatives if using organic corn.

  7. I always cook mine in the oven with the husk still intact. I think that it adds a depth of flavor over boiling in a pan. Plus the husk makes a great handle while eating!
