If you were to raid my fridge you would find LOTS of organic produce, organic whole {or raw milk when the budget allows} milk, pastured organic butter, organic coconut milk, and usually a local pastured pork belly brining in sea salt {though we just smoked the latest for our bacon needs}.
So while we do eat meat {and The Mister and Luv occasionally have dairy}, we also consume a large amount of vegetables! I joke that we eat more veggies than a vegetarian. *wink* Clean eating is important to us, so I love adding raw recipes to my repertoire.
The SimplyRaw Kitchen is the second cookbook from Natasha Kyssa {her first being The SimplyRaw Living Foods Detox Manual}. She also co-owns an organic, gluten-free, plant-based restaurant with her husband in Ottowa, Canada. *I know where I’ll be eating if I find myself traveling to Ottowa…*
The SimplyRaw Kitchen is a fantastic source for healthful gluten-free and mostly raw recipes. This book also considers those who cannot tolerate an all-raw diet and includes specific cooked foods. Initially thumbing through, I found so many recipes that I was dying to try! Here are the two that I have made so far…
Inflammation Buster
Ingredients:
* 1/2 pineapple, peeled and sliced
* 2 tsp chopped fresh ginger
* 1 cup loosely packed cilantro
* juice of 1 lime
* 1/2-in (1-cm) slice jalapeño pepper, or to taste (optional)
Directions:
In a juicer, process slices of pineapple, alternating with ginger and cilantro. Add fresh lime juice and jalapeño.
A juicer is one of the few kitchen appliances I do not have, but would love. So I tried this recipe as a smoothie. I blended everything together, poured myself a glass, and reblended with the jalapeño slice for The Mister’s smoothie {I cannot have peppers}. He absolutely loved it and said the jalapeño was a pleasant surprise. I could easily drink this anytime, but especially when I am feeling stressed or need an energy boost. Delish!
Omi’s Fruit Compote
Ingredients:
* 4 large apples, cored and diced
* 1/2 cup (125 mL) maple syrup or raw sugar
* 6 dried apricots, halved
* 6 prunes, pitted and halved
* 1/3 cup (80mL) dried cranberries
* 3 whole cloves
*1-2 tbsp chopped fresh ginger
* 2-in (5cm) length cinnamon stick
* 1/4 cup (60 mL) lemon juice
Directions:
In a large pot on high heat, bring 4 cups (1 L) purified water and all ingredients except lemon juice to a gentle boil. Simmer until apples are soft and fruit plumped, about 20 minutes. Remove cloves and star anise. Stir in lemon juice and serve warm or cold.
There is something terribly comforting about fruit compotes. Especially when welcoming fall’s crisp apples! Omi’s Fruit Compote was a hit with the family, Bugsy even signed for more! I foresee this becoming a favorite autumn dessert for our family. And just to note; I used maple syrup and halved the amount.
