Wonton Soup Recipe
My friend and I had a big cooking fest the last time we were at my vacation home. In addition to the Healthy Monte Cristo Breakfast Cups we created, we made a big pot of Wonton Soup! I am not sure where she got this recipe, but she said it was so good…she was right!
Ingredients:
1 12 oz package wonton wrappers
1/2 lb. ground pork
1 lb. shrimp (prawns) raw (hold about 10 aside to add directly to the soup!)
10-12 cups chicken stock/broth
1 bunch green onions (1/2 sliced, 1/2 left in longer pieces)
3 bunches baby bok choy (chopped loosely)
1 tsp fresh ginger – minced
1/2 tsp. garlic powder
1/2 tsp. sesame oil
1 tsp. brown sugar
2 tablespoons soy sauce (divided)
1 tablespoon rice wine vinegar
10 mushrooms, sliced
1/2 can sliced water chestnuts (optional)
Chop shrimp very finely (save about 10 whole shrimp to add to soup), and add ground pork, the small sliced green onions (note: remember to save some longer pieces to add to the soup!), brown sugar, garlic powder, ginger, rice wine vinegar, and 1 tablespoon of soy sauce. Mix thoroughly.
In a large pot, add the stock/broth, soy sauce, water chestnuts, long green onion pieces and mushrooms. Add the whole shrimp. Bring to a boil then reduce heat to medium.
While waiting for the soup to come to a boil, start assembling the wontons. Put 1 teaspoon of filling in the middle of each wonton wrapper. Wet two connecting sides with a little bit of water and fold in half to make a triangle and press edges firmly to seal (make sure there are no air bubbles).
Carefully fold over the tips of the triangle and seal with water.
After all wontons are assembled drop them carefully into the soup. You will want to boil them for about 7-8 minutes or until insides are no longer pink. Make sure you handle them gently, and keep an eye on the temperature of the soup. Towards the end, add the bok choy.
You can add more soy sauce if needed.
You can also make a vegetarian wonton soup if desired. Just use this version except substitute vegetable stock for chicken stock, and making the filling the same, except you will omit the ground pork.
Serve with rice or your other favorite Chinese dishes.
This homemade wonton soup is simply amazing. I think it is better than what I get at restaurants!
