What’s Cooking? Apple Cinnamon Oat Pancakes

Apple Cinnamon Oat Pancakes

Tired of your every day pancake recipe?  This recipe is the answer!  With tasty bits of apple, yummy cinnamon and the goodness of oats, your family will LOVE these pancakes.

Apple Cinnamon Oat Pancakes

Adapted from this recipe

2/3 cup all purpose flour

2/3 cup whole wheat flour

1/4 cup packed brown sugar

1 Tbsp baking powder

1 tsp cinnamon

1/2 tsp salt

1 cup quick cook oats

1 egg

1 1/2 cup milk

3 Tbsp canola oil

1 sweet apple (Pink Lady, Gala, etc) peeled, cored and chopped fine

 

Mix flours, sugar, baking powder, cinnamon, salt and oats.  Whisk together the egg, milk and canola oil in a separate bowl.  Add milk/egg mixture to dry ingredients and stir until just mixed.  Fold in apple pieces.

Cook on a lightly greased, hot griddle.  Watch these closely because they don’t bubble like regular pancakes.  Flip to cook second side when they are brown.  Make sure to cook to golden brown so that the oats and apples get cooked.

Serve with your favorite syrup & enjoy!

    OMG, these look so amazing. Of course, anything looks amazing after three days of unseasoned fruits and veggies. Will have to put these on my breakfast list for next week!

      It definitely does. After you get used to pancakes with more texture (from oats or whole wheat flour) it’s hard to go back to “regular” ones.

    These look delicious, I wonder if I can substitute the flours with brown rice and soy flours, (I think I have a gluten problem). I think I will be experimenting. Thanks for the inspiration.

    Oh my, these do look tasty! I love how the recipe calls for 2 types of flour and oats. My kids would love these! Thanks for the recipe!

    Oh my gosh they look SO good! We love pancakes on weekends and even do ‘breakfast dinner” some nights and this will be great! I have never thought of sneaking in oatmeal for the kids to get fiber…I love it though! like that you have the wheat flour too. Thanks!

    I am going to copy this recipe and try it for my husband. He loves anything that tastes like Apples but I won’t tell him about the oats because he is not fond of them but I am. If he eats it first and likes it then he won’t mind that it has oats. If I tell him ahead of time he won’t even try them. This almost sounds like an apple crisp!
