Easy One Pot Roasted Chicken

You know those recipes and just remind you of your childhood? This Easy One Pot Roasted Chicken recipe is one of those. Whenever my mother cooked this, it filled the house with an irresistible aroma.

Easy One Pot Roasted Chicken

Ingredients for one post roasted chicken:

1 Whole Chicken, skin on, washed and patted dry
2 cups baby carrots
Baby Potatoes {or quartered red potatoes} – washed and dried
2 medium yellow onions {thin sliced}
2 cloves Garlic {crushed}
1 1/2 cups cooking sherry {or cream sherry}
3/4 tsp. thyme
1 tsp. each salt & pepper

Directions:

  • Preheat oven to 375 degrees. In large roasting pan {or heavy oven-safe pot with lid}, place whole chicken in pan, breast side down. Evenly distribute baby carrots, baby potatoes, garlic and yellow onions around chicken. Pour sherry on top of chicken and vegetables. Sprinkle thyme, Herbs De Provence, salt and pepper over chicken and vegetables.
  • Put lid on roasting pan/pot and put in oven. Bake for 2 hours, or until chicken is cooked throughout. Turn chicken over {breast side up}, uncover and cook for an additional 10 minutes, until golden brown.
  • Serve with garlic bread and a green salad, and you have the perfect, no-fuss dinner!

You MUST try this next recipe if you are looking to add some spice to your life! I love it in the crock pot or oven and served alongside some roasted veggies and rice!

Ingredients for one pot roasted African Chicken:

  • 1 whole chicken
  • 3 tbsp of tumeric
  • 3 tbsp of chili powder
  • 1 minced shallot
  • 2 tbsp of garlic
  • 1 tbsp salt
  • 1 tbsp of pepper
  • 2 tbsp olive oil

Directions:

  • Mix all the spices together and then rub all over chicken. Place chicken in crock pot on low for 6-8 hours or until it reaches a high enough cooking temperature. 
  • Tip: if you are looking for more of a crispy skin, you can cook in the oven for 1.5 hours at 375 degrees or until it reads a high enough temperature. 
  • Serve with a side or rice or roasted potatoes and some broccoli or brussels sprouts for a complete meal.

  1. This looks wonderful. I am always looking for great ideas for dinner. We like chicken and potatoes are one of my husbands favorite. This is great when it is cold out and it has been lately.
