You know those recipes and just remind you of your childhood? This Easy One Pot Roasted Chicken recipe is one of those. Whenever my mother cooked this, it filled the house with an irresistible aroma.
Ingredients for one post roasted chicken:
1 Whole Chicken, skin on, washed and patted dry
2 cups baby carrots
Baby Potatoes {or quartered red potatoes} – washed and dried
2 medium yellow onions {thin sliced}
2 cloves Garlic {crushed}
1 1/2 cups cooking sherry {or cream sherry}
3/4 tsp. thyme
1 tsp. each salt & pepper
Directions:
- Preheat oven to 375 degrees. In large roasting pan {or heavy oven-safe pot with lid}, place whole chicken in pan, breast side down. Evenly distribute baby carrots, baby potatoes, garlic and yellow onions around chicken. Pour sherry on top of chicken and vegetables. Sprinkle thyme, Herbs De Provence, salt and pepper over chicken and vegetables.
- Put lid on roasting pan/pot and put in oven. Bake for 2 hours, or until chicken is cooked throughout. Turn chicken over {breast side up}, uncover and cook for an additional 10 minutes, until golden brown.
- Serve with garlic bread and a green salad, and you have the perfect, no-fuss dinner!
