On our quest to eating better, we’ve learned a lot. Trial and error is applicable to everything in life! But along the way, I have had a few friends ask my thoughts on how to go about saving money while eating paleo/primal. I can safely say that keeping it simple is key. Organic nut butters, seed butters, and coconut butters carry a sobering price tag that can deter people from making necessary changes in their diet. While there are lots of recipes that call for these “butters”, you can save money by making them yourself! No preservatives, no questionable ingredients – simple as can be!
Homemade Almond Butter
Ingredients:
* Organic, Raw Almonds Buy online, at your local natural foods store, or local co-op.
Directions:
1. Slowly break down the almonds in a blender or food processor. Do not add water, just have faith…
2. Continue blending, scraping down the sides often. Be sure to give the motor a rest now and then so it does not overheat.
3. Once the oils are released, the nuts will blend together with ease. Continue scraping down the sides as needed and blend until it is as smooth as you like it.
4. Scrape the almond butter into a Mason Jar, cover, label, and keep in the fridge for up to 6 months – not that it has ever lasted that long in our home!
Notes:
* Nuts go through stages during the butter making process. Starting whole they will shift from chopped to a fine flour, to a wet sand, and finally to a chunky butter. It is important to continually scrape down the sides and at no point add water to “help” it blend. That will reduce its shelf life.
* I blend 16 ounces of raw, organic almonds at a time, yielding a pint of almond butter.
It takes about 20 minutes a batch, depending on your blender or food processor, and my sources say the end result is delicious! Lately Luv has been enjoying our Homemade Almond Butter with organic honeycrisp apple slices. A perfect fall snack! I also asked The Mister to tell me his honest thoughts since he is the almond butter fiend in our home…
