My goodies from the Pillsbury Purely Simple Blog Hop consisted of: Pillsbury Purely Simple Chocolate Chip Cookie Mix, a Prepworks Collapsible Cupcake Carrier, as well as Bowls, Spatula, Mixing Bowl, Stainless Steel Measuring Spoon and Measuring Cups Sets, and Cool Tool from Le Creuset. I was ecstatic to get the Pillsbury Purely Simple Chocolate Chip Cookie Mix because that’s our favorite kind of cookie around here!
I decided to try a recipe that’s completely new to me because caramel was on my mind. I made chocolate chip cookies with caramel. Another great thing about the Pillsbury Purely Simple baking mixes is you can toy with a recipe for two main reasons: 1. The flavor won’t be ruined because Pillsbury Purely Simple tastes so good on its own that you can’t really mess it up and 2. It’s so easy to add things and change them when the base of the recipe, the mix, is already taken care of for you! So I cut my caramels and placed them in the center but I also think that another way to do this recipe would be to shave the caramels and make little caramel morsels in every bite. You could add a little coarse sea salt to make salted caramels. Maybe even itty bitty diced pieces of apple to make caramel apple chocolate chip cookies. Haha, can you tell I love cookies?! There are so many things that you can do to play with this, I love it!
Without further ado, here’s how I concocted this particular batch of Pillsbury Purely Simple Caramel Chocolate Chip Cookies…
Ingredients:
1 stick (1/2 cup) of softened butter
1 egg
Baking caramels
Parchment paper or silicone baking mat
2. Combine the cookie mix, softened butter, and egg in a medium bowl.
5. Cut your baking caramels in half and place them into the center of your cookie dough balls.
7. Bake at 375° for 8-10 minutes or until edges are set.

I have not heard of these cookies by Pillsbury and they look great and are not hard to make. I live that you put caramel in the middle of these cookies. I want to make these for the Holidays!

I wouldn’t have thought to use caramels because I would have guess they’d have made a mess. Learned that won’t and that’s something new for today.
