The National Pork Board is celebrating their recent launch of the new Pork Be Inspired campaign. This campaign was established to show how you can use pork for any meal of the day. They have delicious recipes and even show you the correct cooking methods too.

For my review I was given a gift card to purchase any kind of pork I would like. I chose to get a 1lb pork loin. I went online to Pork Be Inspired and chose the Italian Pork Kabobs with Summer Vegetables recipe.

 Italian Pork Kabobs with Summer Vegetables

Ingredients:

1 1/2 pounds boneless pork loin roast, trimmed, cut into 1-inch cubes
2 tablespoons red wine vinegar
1 1/2 teaspoons kosher salt
1/2 teaspoons red pepper flakes, or less to taste
1 tablespoon extra-virgin olive oil
1 tablespoon fresh basil, chopped, OR 1 teaspoon dried basil
1 tablespoon fresh oregano, chopped OR 1 teaspoon dried oregano
2 cloves garlic , chopped
2 small zucchini, trimmed and cut crosswise into rounds
2 large bell peppers, seeded and cut into 1-inch squares

Directions:

Prepare outdoor grill for direct medium-hot grilling. For a gas grill, preheat grill on high. Adjust temperature to 400°F. For a charcoal grill, build fire and let burn until coals are covered with white ash. Spread coals and let burn for 15-20 minutes.

Whisk vinegar, 1 teaspoon salt, and hot red pepper together in large bowl. Whisk in oil. Add basil, oregano, and garlic. Add pork loin and toss to coat. Spread zucchini and bell peppers on top of pork, season with remaining ½ teaspoon salt, and let stand 5 minutes. Stir to coat with marinade. Do not marinate longer than 15 minutes. Skewer pork, zucchini, and bell peppers, alternating ingredients, onto 6 metal kabob skewers.

Lightly oil cooking grate. Place kabobs on grill and cover grill. Cook, turning occasionally, for about 10-12 minutes or until pork is browned. Let stand for 3 minutes, then serve.

I didn’t have metal kabob skewers so I used wooden ones, but I failed to soak them long enough. They ended up burning and breaking, but dinner was still wonderful! The marinade was  perfect, it gave the pork a sweet tangy flavor. I will definitely be consulting Pork Be Inspired again for future recipes!  On a side note, we also tested out a recipe from the How to Cook Like a Top Chef cookbook (which is included in giveaway)!  We tried the Shrimp Mac and Cheese, which was amazing!

  1. My favorite way to cook pork is to marinate in in Teriyaki Sauce, (overnight best) and then let my husband throw it on the grill. Will be very tender and melt in your mouth.

  6. I like to cook it slowly all day in the crock pot with BBQ sauce and make pulled pork sandwiches.

  7. My favorite way to cook pork is making pulled pork in the slow cooker. I place a pork roast in a slow cooker with garlic, onions, celery, and carrots. I then like to pour over a bit of flavorful fluid to cover before cooking for 10 hours. I like to use broth, mushroom and onion soup, or Worcestershire, depending on my mood.

  49. I love nice thick pork chops rubbed with S&P & lots of fresh or dried thyme. Bron in sauté pan then cook thru slowly remove & keep warm. Deglaze pan with a little chicken broth & balsamic vinegar, reduce then finish with a little butter swirls through. Makes a great pan sauce to put on mashed potatoes, rice or couscous . My husbands favorite

  54. I love to flour and fry porkchops. Probably not the healthiest way to prepare them, but they sure taste good.

  55. I almost always cook mine low and slow in the crock pot, fat side down, pour in 1-2 cups water, then on top of pork pour fav BBQ sauce. It turns into the most tender, moist pork to make pulled pork out of.

  57. I take pride in my cooking. I love cooking and it’s something that I’m pretty good at. However, I’ve struggled with pork for years! No matter how I cooked it, it turned out dry. It was frustrating! Then, by some miracle, I came across and recipe with a whole new way to cook pork, and it turned out INCREDIBLE! I’ve cooked pork chops, pork roast and ribs all this same way and they all turn out juicy and tasty and fantastic! It’s all about indirect heat. I sear it on the grill, then cook it on indirect heat, nice and slow, and put a little tent of tin foil over it. I’m telling you, you can’t go wrong!

  62. My favorite way to cook pork is as a Spinach Cheese Stuffed tenderloin – grilled! I slice open the tenderloin in the middle almost all the way through, then make another slice almost all the way through on each side, then pound flat. Then I cover the tenderloin with a thin layer of butter or olive oil, salt and pepper it, then layer fresh baby spinach leaves, thinly sliced ham and shredded cheese. We usually do two, one with fresh jalapenos sliced added to the stuffing. 🙂 Roll up and tie with twine. You can do this in the oven as well as the grill.   68. My favorite way to cook pork is to brown it on all sides and then finish it off in the oven. Then I like to make a sauce of some kind and after the pork is cooked and rested, flip it on both sides in the sauce and serve. It sounds complicated but it really isn’t.

  79. My favorite way to cook pork is on the grill. I like to season pork chops with a bit of a dry rub and then just grill them until the are just about well done, but not quite. I wish I could say that I had the skill to slow bbq a pork butt and make my own pulled port, but I can’t. Besides, it is so much easier to go to my local bbq joint if I want good pulled pork!
