I have had so much fun being a part of the Swanson Blogger Enthusiast Program. I love creating new recipes, and Swanson canned white premium chicken makes it a breeze to come up with quick and tasty meals for my family. This is my final recipe as part of the program – I hope you have enjoyed my creations as much as I have enjoyed sharing them with you!
The theme this time is Summer classics – or recreating a favorite summertime recipe. When it is hot outside, I really do not like to heat up the kitchen. Between the 100+ degree weather and my middle-age hot flashes, I like things cool! I came up with a yummy Summer Chicken and Corn Salad with Creamy Balsamic Dressing recipe. The dressing is actually one I created several years ago, and I got to thinking how tasty it would be atop lettuce, Swanson canned chicken, and a few other goodies.
Ingredients:
Creamy balsamic salad dressing:
1 cup mayo
2 tsp. balsamic vinegar
1/4 tsp dill weed
2 cloves crushed garlic
Small can sweet corn, drained
Salad:
Lettuce
Chopped green onions
Optional: Croutons, shaved parmesan cheese, chopped walnuts, crispy onions (canned)
In a medium sized bowl, combine all ingredients for the salad dressing. Here is my dressing, with the corn about to be mixed in:
Wash and dry lettuce and place on plate. Top with a generous amount of Swanson canned chicken:
On top of the chicken, add a large dollop of dressing, and top with green onions, more corn, croutons, shaved parmesan, walnuts and crispy onions (if desired). Serve with a little extra dressing on the side. This would be a great meal for the winter too, alongside a steaming bowl of soup!

I use their chicken A LOT as a shortcut in casseroles and stuff. That looks terrific!
