It’s the end of summer. It’s hot and you’re busy–do you really feel like cooking? I think we all know the solution to this problem: SALAD! But serving the same salad again and again gets boring. And if you’re going to a cookout or hosting a barbecue yourself, you want to serve something special, right? Well, special salads start with special dressings and Wish-Bone has you covered in that department!

I received a Salad Sampler Kit from Wish-Bone with four of their newest varieties of dressing: Bruschetta Italian Dressing, Greek Vinaigrette, Superfruit Berry Vinaigrette, and Mediterranean Italian. They came just in time for the bumper crop of lettuce, basil, and cucumbers I got from my garden last week! I love having a variety of salad dressings on hand because you can use the same base ingredients and serve something a little bit different every day of the week. And salad dressings are versatile too–toss them with veggies before roasting or even use on a sandwich if you feel so inclined. The oil in salad dressing also helps your body absorb the nutrients in vegetables.

My Salad Sampler Kit also came with an array of recipes. My favorite was the Panzanella Bruschetta Salad. I deviated from the original recipe a little–we don’t eat meat, so I omitted the chicken and added cucumbers instead. This is our new favorite salad–it really does taste like bruschetta in a bowl and it’s the perfect way to use all those cherry tomatoes that are ripening right now.

Panzanella Bruschetta Salad
Serves 4
Preparation Time: 20 minutes

 

Ingredients:
1/4 cup Wish-Bone Bruschetta Italian Dressing
1 lb. cut-up cooked chicken (about 3 cups)
4 ounces whole grain Italian bread, cut into bite-sized pieces (about 4 cups)
5 cups cherry tomatoes, quartered
2 cups coarsely chopped arugula or baby spinach leaves
1/3 cup chopped red bell pepper
1/4 cup cubed part-skim mozzarella cheese (about 1 oz.)
1/4 cup chopped fresh basil leaves (optional, but my advice is not to omit it!)

Combine all ingredients except basil in large bowl. Garnish with basil.

  1. My favorite salad of all time, but mostly when the fresh tomatoes are in, is basil-tomato-mozzarella salad, a.k.a. caprese salad. With balsamic vinegar, olive oil, and salt and pepper. I could eat it every meal!!!

  2. My favorite summer salad is Caprese salad- summer-ripe tomatoes, fresh mozerella, and fresh basil. Sprinkle with olive oil. Yum!

    SUMMER SALAD !!!!!
    Sliced cucumbers
    chucks of fresh tomatoes
    sliced red onions
    chopped green onions
    then you add the Wishbone Dressing !
    I have done this for I do not know how many years !
    I love it and could eat it forever and a day, it is so refreshing to me

  4. I make and chill either couscous or quinoa, then mix with freshly cubed tomatoes and cucumbers, drizzle with olive oil, fresh ground pepper, sea salt and finely chopped cilantro. Sometimes a squeeze of lime for good measure.

  7. My favorite summer salad is same as my all year round salad. I love spinach with a tiny bit of iceburg lettuce, lots of cucumbers, shredded carrots, diced banana peppers, celery, mushrooms, garbanzo beans, bacon,cherry tomatoes, lots of blue cheese crumbles, croutons and a healthy amount of thousand island dressing. YUMMY!

  25. When I go to a restaurant it’s Caesar salad. At home I love a fresh garden salad with whatever greens I have, a fresh tomato, purple onion, cucumber, and who knows what else I might toss in.
