I’m back again to share even more great info about Hellmann’s mayo! Last time I posted a time saving chicken recipe, and today I want to save a budget friendly recipe for you!
If you have a family (or a large group of people to feed on a regular basis), I’m sure you know how expensive it can be to provide a nice meal night after night. Although I love trying new recipes, I have found that it can be expensive, as so many of the recipes call for expensive ingredients (mainly spices), that I will probably only use once. Not only does this take up extra room in my kitchen cabinets, but it is costly. What is the solution? I try to make meals that use simple ingredients – ingredients that I always have on hand. Not only is this a huge time saving factor, but it saves so much money. Hellmann’s has so many tasty recipes that are budget-friendly, and that is exciting to me, because I can try new recipes without spending a fortune doing it!
I found the following budget friendly recipe (Oven-Fried Herb Chicken) on the Hellmann’s website:
Oven-Fried Herb Chicken
Prep Time: 10 minutes
8 servings
Cook Time: 40 minutes
1/2 cup plain dry bread crumbs
3/4 tsp. garlic salt
1/2 tsp. dried oregano, parsley or rosemary leaves, crushed
1/4 tsp. ground black pepper
3-1/2 lbs. chicken parts, skin removed
1/2 cup Hellmann’s® or Best Foods® Mayonnaise Dressing with Extra Virgin Olive Oil
Combine bread crumbs, garlic salt, herbs and black pepper in shallow dish; set
aside.
Add chicken and Hellmann’s® or Best Foods® Extra Virgin Olive Oil Mayonnaise
to large plastic bag; shake to evenly coat. Remove chicken, then lightly dip in crumb
mixture. Arrange chicken on cookie sheet.
Bake 40 minutes or until chicken is thoroughly cooked.
Cost per serving*: $.88.
*Based on average retail prices at national supermarkets.
Look how beautiful it turned out! It was really good and so moist. I can’t wait to make this again! This is definitely a budget-friendly recipe…I like that!

We eat a lot of pasta and chicken when I am watching my budget (which is most of the time). It is also easy to make a lot with these two items and then my husband and I can take the leftovers to work the next day for lunch.

I will cook a whole chicken. It costs a bit up front, but the first day, we eat off the chicken. I shred the rest to make chicken tacos, chicken quesadillas and chicken enchiladas at least three more days. Finally, I use the bones and innards to make my own chicken stock that I often us in some chicken and dumplings. Best way to stretch your dollar
REQUIRED ENTRY: we do alot of soup and stews or pasta with meat or cheese sauce
I love cooking up a huge batch of chicken (just baking it, nothing special) and serving it with rice and veggies. Then, we shred what’s left and have chicken pizzas the next night. If I have any left it gets tossed into my “everything soup”.
